I am marinating my chicken and steak for dinner tonight. I don't even miss the tortillas. I also add a couple bell peppers with the onions.
Fajitas Server two as an entree • Marinade • 1/4 cup fresh lime juice (0) • 1/3 cup water • 2 tablespoons vegetable oil • 1 large clove garlic, pressed (1 carb) • 3 teaspoons vinegar • 2 teaspoons soy sauce (.75) • 1/2 teaspoon liquid smoke • 1 teaspoon salt • 1/2 teaspoon chili powder (1) • 1/2 teaspoon cayenne pepper (.5) • 1/4 teaspoon ground black pepper • Dash onion powder • ________________________________________ • 2 boneless, skinless chicken breast halves or 1 pound top sirloin or a combination of 1 chicken breast half and 1/2 pound sirloin • 1 Spanish onion, sliced • 1 tablespoon vegetable oil • 1 teaspoon soy sauce • 2 tablespoons water • 1/2 teaspoon lime juice • Dash ground black pepper • Dash salt • On the Side • 1/2 cup pico de gallo • 1/2 cup grated Cheddar cheese • 1/2 cup guacamole • 1/2 cup sour cream • 1 cup shredded lettuce 1. Combine all of the ingredients for the marinade in a small bowl. Soak your choice of meat in the marinade for at least 2 hours. If you are just using the sirloin, let it marinate overnight, if possible. 2. When the meat has marinated, preheat your barbecue or stove top grill to high. 3. Preheat a skillet over medium high heat. Saute the onion slices in the oil for 5 minutes. Combine the soy sauce, water, and lime juice in a small bowl and pour it over the onions. Add the black pepper and continue to saute until the onions are translucent and dark on the edges (4 to 5 more minutes). Salt to taste. |
Egg Muffins
Who knew that eggs would bake just like a cupcake? They raise up and brown on top.
So this was my first attempt and they came out a little bland. Good thing I only made 6. Next time I will add more spices and maybe some bacon. And I can still eat the last 4, I will just pop them in the microwave with a slice of cheese on top. :) Preheat oven to 375. Scramble 6 eggs. Add any spices you like. Pour into 6 muffin cups. Add cheese (or whatever you want). Bake 25-35 minutes. I think next time I will also add chives. Perfect breakfast on the go. |
Lts Girl, these recipes sound delicious. Question: When you scramble your eggs to put them in muffin cups, do you scramble them as they are or do you add any cream or half and half or anything? I want to try these since my breakfast is always on the go.

Thanks, Lts Girl. I do love the Chili's fajitas; I order them without the tortillas sometimes. Thanks for posting your recipes.

Hey Sandyfannie ! Wanted to find where you regularly post so I could catch you,
Wow....you are all doing GREAT with the amounts of weight you are losing!! When you're not here every day...you can really see the difference in everyone's tracker when you pop back on. For dinner, I had cream cheese with big hunks of lox I cut up and added...because I was craving it for some reason. It was delicious....I have the other half in the fridge for later..........or for tomorrow.:D I am getting addicted to meatloaf....whereas I think I should be getting tired of it. It's too bad they can't invent "electronic food", just like the electronic cigarette. Rather...I wish *I* could invent it and be rich!! Can you imagine? deena:) |
A bed of shredded lettuce with slices of taco-seasoned chicken on top, jalapenos, sour cream, cheese, and guacamole. I made an easy guacamole by mashing up 1 avocado, adding some granulated garlic, chopped dry onion, a tablespoon or so of salsa, salt, and pepper. I put half of it on my salad and half of it in a bag to eat on another salad tomorrow for leftovers. I LOVE guacamole so this is a great treat for me.
