Winter Storm...
I live on the NC Carolina coast, almost as far south as you can get and stay in NC. A winter storm is cause for big excitement. I went to the grocery store to get a few things, but I really went out to buy an extra bag of this big girl's food. I don't want to be iced-in with a "hangry" Puddin' - that's our word for hungry and angry.
I'm in the mood for comfort food...tonight I'm making almond flour pancakes and having bacon and sugar-free raspberry jam with them. I hope they're as good as the picture looks! They should check out at 8 carbs per serving including the sugar-free jam. I love breakfast for dinner when it's cold outside; it reminds me of being a little girl. |
Pot roast and salad with dressing. I swear, I love this WOE simply because I can eat lots of pot roast! It's one of my favorite foods of all time.

I love pot roast, too! It's easy, tastes fabulous and I can eat well for days without cooking again. What could be better?

This is soup week for me. It is cold ~ YUK!~ So I made cauliflower soup today. I will eat that for lunch tomorrow as well. Then I will make a spicy beef stew tomorrow night.

I'm making cream of tomato soup for lunch; I'm sure I'll have a bowl with the pot roast I'm working on for dinner. We have snow on the ground...sort of. No school for me, so I'm cooking for the week.

That pot roast with the Greek seasoning and sweet onions is absolutely delicious. Dinner's AWESOME. I had pot roast and a spinach salad. Perfect for my winter storm day...and lots left for another winter storm day tomorrow. Two days out of school for ice - that's unusual for us on the Carolina coast, but I can adjust.

I'm going to have breakfast for dinner, yum. Tonight is a cheese omelet and sausage patties.
I think tomorrow I'm going to make Dottie's Green Bean Casserole (http://www.genaw.com/lowcarb/dotties...casserole.html) with the leftover pot roast if I'm not busy. If I don't have time I'll just heat up the roast and a salad. Sandy, how long does pot roast stay good for in the refrigerator? I'm the only one around here who eats leftovers and I don't want it to go to waste. It's sealed in a Tupperware container. |
I made Chicken/Bacon roll ups! Sooo good.
They're just chicken w/ chive and onion cream cheese on the chicken, and then bacon rolled up on the outside! :) LOVED them! |
Linsy, your pot roast should be fine for three or four days...if it lasts that long. I just put mine in a smaller ceramic casserole with a lid and popped it in the fridge.
I wonder if it would work to make something like beef hash using drained, cooked cauliflower in chunks and some of the pot roast - mixing it with onion, salt, pepper and then frying it up in a little butter - sort of like corned beef hash. Usually it's made with potatoes, but why not cauliflower? What do you think? Cassie, your chicken and bacon roll ups sound great...how do you make them? Do you use cooked chicken and bacon? Or do you bake them? Details, please. |
Pot Roast with veggies...
I'm having some of that delicious pot roast with steamed baby vegetables (from a box!), a spinach salad and homemade sugar-free honey mustard dressing. :hun:
