What I had after dinner...about 10 o'clock I wanted "something" so I made hot chocolate using the recipe in "Recipes from 'What's for Dinner?'" It more than did the trick! I recommend it when you want something hot, comforting and sweet. No cheese involved!

I made some hot chocolate the other day, but it didn't turn out great. I'll definitely check that recipe out.

The mashed cauliflower was a success--a little bit chunky because we don't have a food processor and the magic bullet didn't work, but it did the trick. I steamed the cauliflower, drained the water really well, and then mashed it and added heavy cream, shredded cheese, butter, salt, and pepper. A few minutes ago I sampled it and decided to add some garlic salt and granulated garlic. Delicious! Garlic mashed potatoes. :)

Tomorrow's breakfast is going to be great--I'll probably skip lunch because it'll be a big brunch-type meal. A 2-egg omelet with cheese (the only cheese I'll be eating all day) and patties made from fresh sausage from the butcher. I'm also going to make jicama hashbrowns (http://blog.yourlighterside.com/2009...ed-browns.html). I've never had jicama so hopefully they turn out and I like them. I'm trying to experiment with more veggies!

I'm so glad your garlic mashed potatoes did it for you. Cauliflower is super-useful and part of so many recipes. The stuffed baked "potatoes" on Linda's Low Carb site looks delicious too, but I haven't gotten around to trying it. I make a cauliflower "potato" salad I really like also.

Good for you for experimenting with veggies...the key to losing all of our weight has to be learning to eat a wider variety of veggies every day along with our proteins. And you're on it! Happy Last Day of 2010...

Dinner at Macaroni Grill...
 
I ordered a green salad with peppercorn ranch dressing - ditched the croutons - and their chicken with olive oil and lemon grilled on skewers, a side of grilled eggplant, zucchini, red and yellow peppers - ditched three potatoe wedges that were somehow in my vegetables.

The order is two skewers of chickens and a nice serving of veggies. I ate one skewer of chicken, about half the veggies and brought the rest home for lunch today.

I checked a website for nutritional information: grilled chicken spiedini with grilled vegetable sides is 9 net carbs (which includes the potatoes I didn't eat).
The green salad is listed at 17 net carbs which includes the croutons and dressing. I don't know how they figured all dressings were the same carb count, because they obviously aren't...whatever. I did pretty well.

After shopping snack stop: a decaf coffee with sugar-free raspberry syrup and half and half.

Dessert at home: low-carb cheesecake muffin with a tablespoon of sugar-free raspberry jam and whipped cream.

Tonight was roast with greek seasoning, green beans tossed in oil/butter and green onions, and a salad with ranch dressing. Dessert will be pumpkin "pudding"...

Last night I wanted to do something with the can of pumpkin I had in the cabinet, so I was going to make Jody's pumpkin bake. I decided to ditch the eggs and just make the batter--I used 3/4c splenda and a few tablespoons of Torvani sugar-free vanilla syrup. It tastes great! I call it my pumpkin pudding. Cream cheese, pumpkin, splenda, cinnamon, pumpkin pie spice, and torvani vanilla syrup.

Tomorrow for dinner I'm making pizzas for the whole family--cauliflower, egg, and cheese crust for me and regular flour for them. I'm topping it with homemade pizza sauce, cheese, black olives, pepperoni, and jalapenos. Mmm.

Lazy Chicken Alfredo...
 
Tonight I'm having Lazy Chicken Alfredo - refrigerated pre-made Alfredo sauce, rotisserie chicken breast and fresh cooked broccoli layered in a little casserole. YUM!

I'm using Buitoni - 4 carbs per 1/4 cup of sauce. :)

And I'm making a broccoli salad (as long as I'm microwaving broccoli) with broccoli, sweet chopped onion, lots of crumbled bacon and homemade honey mustard salad dressing. I'll pop it in the refrigerator, and it'll be ready to eat with my dinner tomorrow night.

Tonight I'm grilling some chicken and will top it with mushrooms and maybe a slice of swiss cheese - today has been cheese-heavy and i may not feel like having more. Then alongside it, a serving of italian zucchini casserole (basically zucchini, a smidge of onion, butter, 2 eggs, italian herbs, baked and topped with cheese).

Making chicken legs that have been m arinating in poultry seasoning, olive oil and lemon juice....will bake them along with some yellow zucchini.leftover baby broccoli..will also make a salad with caesar dressing.....

Late afternoon at work. I'm glad I have some broccoli/chicken alfredo left. I'm having the rest of it and some chicken salad with the yummy cheese thingeys. I'm glad they don't come in a box; I'd eat 'em all!

Hot green tea...it's cold again! Maybe a cheesecake muffin later...I don't really need to make a dozen of those at a time. They're way too good.

Hamburger steak (90 /10 ground beef) with sauteed Vidalia onions and a spinach salad, ranch dressing. Hot green tea.

3 egg muffins (egg, cheese, and jalapenos) and about 2 cups of a mixed green salad topped with an entire mashed avocado seasoned with minced onion, garlic powder, salt, and a dash of hot sauce. Delicious! I think I found a new favorite salad topping, but maybe I'll only use half of the avocado instead of the entire one next time. I need to be careful with the seasonings, they have more carbs than I thought they did. :eek:

I had the same thing I had for lunch. A salad with chicken cut up in it, along with peppers, onions, tomato (just a couple little cherry ones) and some pepper jack sliced into it. I'm not a very creative/inventive eater. If it's fast and easy I'll try it, otherwise I eat the same thing over and over.
