I have a sausage, egg and cheese casserole in the oven. I'll probably eat a square for lunch and a square for dinner. It's made a bit like a quiche but much heavier.

I took 1lb of sausage, about 5-6oz cheese (shredded very fine), 7 eggs and some "splashes" of heavy cream. Crumble the sausage in a skillet, brown and drain it, and then put it in the bottom of a casserole dish. Layer the cheese evenly over the sausage. Beat eggs, cream, and pepper in a bowl and then pour over the sausage and cheese. Bake until eggs are completely set. I have mine in at 375 right now because I didn't really know what to bake it at.

I made something similar on Christmas morning and it was a hit with the family. It's great for an easy reheat-able meal that is low in carbs.

Sounds great, Linsy. I love breakfasty casseroles like that. I used to make one with shredded potatoes... Maybe time to try shredded turnip or jicama :)

I have a roast in the crock pot for tonight. There are some onions in there with it, so I'll have a few pieces of onion and some asparagus. The smell wafting through the apartment is so delicious....

Hey Linsy, check out my recipe for the sausage, egg and cheese thingey on my recipe thread. I bake it at 350 degrees if I'm using a metal pan, 325 if I'm using glass. But it's not fragile...375 should work just fine. I make this as much as once a week for a quick meal or even a little square with a cup of tea as a snack.

Dinner at Crab Catchers...
 
My favorite Little River seafood dive...and it is a dive, for sure. I've been going there for seafood for twenty years - excellent.

I ordered a grilled scallop sandwich without the bun, one fried oyster, and a water with lemon. I ate four hushpuppies (and could've eaten a dozen) and five french fries. Haven't had a french fry since August; they have awesome hand-cut real fries...:devil:

and they weren't all that great. I'll skip them next time and act right.

Sandy, I went out with friends a few weeks ago and had some deep-fried jalapeno poppers from the appetizer tray. They were fantastic. Then I asked my companion if I could have a bacon-cheese fry off of his plate, and took one bite...and then put it back. The taste was not worth the carbs! (The jalapeno poppers were worth every crumb, though!)

After dinner tonight (sausage casserole) I made a no-bake cheesecake: (http://www.genaw.com/lowcarb/its_a_snap_cheesecake.html) Instead of using Splenda I omitted the sweetener and 1/2 cup of the water and used 1/4 cup Torani chocolate syrup and 1/4 cup Torani caramel syrup. Caramel chocolate cheesecake at 2 carbs per 1/8 of the pie. ;) I'll tell everyone how it tastes tomorrow.

Edit: The cheesecake was DELICIOUS and everyone loved it!

White Castle Cheeseburger Pie...
 
I came home tonight late STARVING and started cooking when I walked through the door...White Castle Cheeseburger Pie. The recipe's on my recipe thread from Linda's Low Carb Menus and Recipes. I think it's super-good!

I cut the cheese to 6 ounces and use the minced dried onion and onion powder - no Lipton soup mix for me. Tons of sodium.

So, tonight it's White Castle pie and maybe a spinach salad with a sprinkle of parmesan, crumbled bacon and homemade honey mustard dressing. I'm ready for it! :D

Tonight I finally got around to making Dottie's Green Bean Casserole. It looks really good, but I think 8oz of cheese for a 6 serving dish is too much. I'll probably cut the cheese down to about 6oz if I make it again, it's LOADED with cheese. I'm going to be having meatloaf "cake" (basically just meatloaf in a shallow dish so it cooks faster) with the casserole. I'll post if the casserole is any good after dinner.

I'm proud of us, Linsy, for cutting the cheese in these recipes. I know it's a "staller," "water-retention devil," but it makes Atkins bearable for me. Maybe if we cut it gradually in recipes, we'll get used to less cheese every day.

I'm anxious to hear how you liked the green beans; I forget to eat green beans. I get stuck in broccoli, cauliflower and asparagus. I bake meatloaf the same way...it takes so much less time. Enjoy your dinner!

I would definitely recommend cutting down the cheese to 6oz. I used the full 8oz and it was actually too much! The whole family LOVED it. I didn't tell my dad there was mayonnaise in it until after he ate because I didn't want to gross him out. :lol:. When you look at this dish, it seems really heavy, but its actually not that bad. The majority of the dish is actually veggies.

I had to do that to my boyfriend with the Whitecastle Cheeseburger Pie. He hates mayo... There is 1/2 cup of mayo in it!! I didn't tell him and he LOVED it.

You know, I find Linda's recipes in general to be absurdly cheese-heavy. I wonder why that is? Does she just have a taste for cheese? I've seen some of her notes state that she increases the cheese from the original recipe, too. I guess it must be a matter of personal taste. I always dial down the cheese too.

I made the white castle cheeseburger pie a couple of months ago, too. Everyone usually ends up liking the recipes even if they're weary at first.

I've noticed that Linda often adds more cheese to recipes. In fact, in the green bean recipe she added extra cheese and I followed her instructions. Like I said, I'll definitely cut it down next time.

Tonight I'm having a simple dinner, a tortilla pizza w/ a side of broccoli.

Edit: Dinner was SO good. I felt like I was really eating pizza! I just took a really low carb whole wheat tortilla, topped it with homemade pizza sauce, 1oz of grated colby jack, olives, and a few jalapeno slices. When it was time for dinner I popped it under the broiler for a few until the tortilla was crispy around the edges and the cheese was melted. Good thing I keep my lc tortillas in the freezer (to stop me from eating them too often) or I would try to make this every day! :lol:

Green Bean Casserole...
 
I'm taking Linsy's recommendation and making Dottie's green bean casserole to have with my rotisserie chicken. I'm thinking of making the cheesecake muffins for a treat after dinner. This is shaping up nicely!

I bought what I need to make the green bean casserole, I have been eyeing it for a while. Will make that tomorrow with a pumpkin-sausage soup.

Today was my first experience eating out on Induction, and it made me pretty nervous to give up control of my food to someone else. We had fajitas and I think it turned out pretty well (obviously I had no rice, beans, tortillas). Let's hope there was nothing weird hidden in there anywhere...

Good job, abluvion. Fajitas are one of my go-to orders. There may have been msg in there, but generally with fajitas, what you see is what you get. Enjoy your weekend!
