I always see the what's for dinner threads but they are for IPers or something!

So, calorie counting folks - what are you having for dinner tonight?

Oh, I love these threads.

I had a warm salad of green beans, flageolet beans, cauliflower, potatoes and salmon, dressed in olive oil, garlic, lemon juice, salt & dried parsley.

It was yummy and only about 500 calories, though it really needed some olives or capers, of which I had none in the house!

I am currently drinking a post-dinner Bengal Spice Tea (amazing, amazing herbal tea, which tastes like Christmas) & toying with having an Alpro dark chocolate soya pudding for desert

Planning on 5 oz steak and a half cup of mushroom and onions sauteed in olive oil. (404) calories

Snacks for later vitatop muffin (90 calories) and sugarfree jello 15 calories

Friday is my weekly splurge lunch with my bestie.... so that leaves me a little under 500 calories for dinner. I doubt we will go anywhere to eat, so I'm probably making grilled ham and cheese sandwiches with 2% cheese and orowheat bread and maybe an egg on top!!! I have some leftover spinach salad, so that's on the side. My splurge left me out of a bedtime snack, too, but that's ok, it was worth it!

Everything sounds so good!

I'm making some beef tenderloin, about 5 oz.
Boiled red potato.
And thanks to the idea from gapeach, I'm giong to saute some onions and mushrooms on the side.

it will clock in around 600 cals if I add some butter and have a few crackers.

Last night I made Big Mac Bowls- which I stole from the IP'ers but it's really good and super low cal if you modify it a bit. I threw a veggie burger patty (100 cal) on my George Foreman grill. While that was cooking, I put a couple of big handfuls of shredded iceberg lettuce into a bowl (10 cal) and chopped up a pickle spear (5 cal) and some onions and tomatoes (10 cal). I tossed all the veggies with 2 Tbsp. of yogurt-based low fat 1000 Island dressing (40 cal). When the patty was about done cooking, I put a slice of ff cheese (35 cal) on top and let it melt onto the patty. Then I chopped the cheesy veggie patty up into little pieces and topped the salad with it. 240 calories and sooo good and easy.

Tonight I've got some Mahi-mahi fillets in the freezer. I think I'm gonna do a little citrus-y, ginger-y marinade on them and throw them on my George Foreman (that thing is amazing). I've also got some left over black rice (sooo good- I found it at Costco and really like it) that I will probably make into a cold rice salad with some red wine vinegar, diced mango, a little goat cheese, some red onions, and cilantro. And then something green to go with. Maybe some green beans with tomatoes and chicken bouillon.

I threw my boiled red potatoes into the pan with the mushrooms and onions so they could brown a little and get more flavor. Then I served the whole thing in a bowl - pieces of the tenderloin on top of the potato hash. So filling and easy! I usually struggle to eat veggies, but these were great.

I just started calorie counting on Monday! Tonight's dinner was turkey meatloaf muffins (found a great recipe), roasted broccoli and red peppers, and brown rice. 520 calories!

i had pork slow cooking with onions in the crockpot all day....i shredded it up with taco seasoning and they had tacos for dinner...i had a taco salad with lettuce, tomatoes, meat, salsa and greek yogurt instead of sour cream

Homemade pasta sauce (2 slices bacon (diced), 4 tomatoes, 1/4 onion, 2 cloves garlic and a small can of tomato paste) and smart brand spaghetti.

This is dinner for the next two days for fiancé and I. The sauce weighs in at 450 cals TOTAL! 1/2 c of spaghetti with it and a sprinkle of Parmesan.

HotMess, roasted broccoli is my new fave-- it is sooo good with a little olive oil and curry powder. I ate a whole pan of it standing over the stove a couple of weeks ago, and I'm not even a huge broccoli fan.

Alaskan, I think I like Greek yogurt even better than sour cream these days!

I had greens and beans- beet greens and chard with cannellini beans, cooked in red wine and chicken stock with chicken sausage and a French roll. Yum! 627 calories (there may have been some butter involved )

last night I had a giant green salad with lots of different veg and a salmon burger patty broken up into it. Yum!

Tonight I made chicken tortilla soup with avocado and a few chips crunched up over the top.
