Hello GG
About that snicker cake.... It was sitting on cabinet calling me. So I put remaining in a bowl and put in refrigerator. Still thinking about it. Yesterday was weigh in day. Gained another 1/2 lb. Last week I also gained 1/2 lb. So mad at myself. I went to the refrigerator and with guilty feelings I started to eat and with every bite I felt horrible and thought about all the binge eating I had done all my life and I asked myself do I want to go back to the way I was. Finally after a hefty amount of cake I picked the bowl up and threw the rest in the garbage. I knew I was throwing dh's bday cake but I had to do it. For the last 4 months sweets in the house had not bothered me but now it does. I did a lot of soul searching yesterday to get myself back on track. I prayed and asked for strength to see this thru. This morning I woke up and felt better. By writing this I feel like I'm bearing my soul and I thank you ladies for being a support system for me.

Ginger.. It does feel good when only good things are in my shopping cart. I think shopping is the hardest thing because there are so many things Im not allowed on my food plan. It even worse when I shop hungry.

Bobbi that's the last thing I want to do is tell you about snicker cake. It's suicide. Lol about the undies. True though. About the land yes it's a lot to keep up but there is no better place to live than out on the land in the country. We raised our boys in the country and I see so many children dragging the streets with nothing to do. Our boys learned about work and where groceries came from. I guess you can say they could live off the land very easy. Nothing like kids today that are in front of video games and tv.

Bobbi,

My all time favorite and easiest bread recipe. Add a little more sugar for sweeter recipes like cinnamon rolls.

No-Knead Tupperware Bread
I haven't made this, but sounds so easy.

No Knead Tupperware Bread SO GOOD

Ok. those that are afraid to make bread.. this is GREAT and you don't
have to knead it and you don't get that texture that bread machines
give. Easy to do and excellent.
You just combine ingredients in large tupperware container and let it
burp the lid off.

3 pkgs dry yeast (can use quick rise)
6 T sugar
3 3/4 cups warm water (no more than 105° to 115°)
10 cups all purpose flour(you can substitute some for wheat flour for
a more fiber rich bread.)
6 T stick margarine, melted
1 T salt
2 eggs slightly beaten
nonstick cooking spray

Dissolve sugar in warm water and add yeast in 7 quart tupperware
bowl. Let stand 5 to 10 minutes until you see foam rising and know
the yeast is feeding and active.
Add flour, margarine, salt and eggs, stirring until well blended. Cover
container with Tupperware lid and seal. Let stand at room
temperature 1 hour or unitl lid pops off.
Spoon dough evenly into 3 9x5 inch loaf pans coated with cooking
spray. Cover and let dough rise in warm place (85°) free of
drafts, 30 minutes or until doubled in bulk. Bake at 350° for 40
minutes until they sound hallow when tapped or reads 190° on a instant
read thermometer.
16 servings per loaf
110 cal
2 fat
1.9 fiber
If you substitute whole wheat flour for half this the fiber rate goes to 4. That makes it 2 pts per serving.

Easy peasy. My granny taught me this one. She loved it too.

Rie - thanks for that bread recipe! It sounds wonderful... I used to bake bread from scratch, years ago, but the muscles in my right forearm became much larger than the left, from all the kneading (very weird looking)... and I pretty much limit my bread intake, anyway. But this sounds so good and easy... and I'm already thinking of Christmas gifts!

Everyone - thank you for your concern about the fires. No, I'm not close to anything. Fort Collins (the High Park fire) is about 90 minutes north of me; Colorado Springs (Waldo Canyon fire) is about 90 minutes south of me. We're getting a lot of smoke from all directions, since we now have fires N, S, and W of us. It just breaks my heart to see them all over the West... Rie - are you or yours in any danger? There was a blurb on the news that the FBI and Homeland Security are involved, because there was chatter a while back that there might be some terrorist activity using arson and fire. When those two agencies get involved... well, we'll see.

KarenFL - how are you coping with Debby? From the news, FL seems to be getting hit HARD. And please answer all the questions about Dash, the terrible dogs, and their even-more terrible owners?

Carol Sue- How did you make your buns from frozen dough. I used to do that years ago but I don't remember what I did. Do you let the dough rise, then form the rolls and let them rise again? How much dough do you use for each roll...how many rolls do you get from 1 loaf of dough?
Carol Sue, I thaw the bread out, then use my kitchen shears and cut off 16 1oz. pieces. (loaf weighs 1 pound)I use my kitchen scale so they're all the same size. I put on parchment paper/cookie sheet and let rise. Bake, can't remember what temp. I googled the temp for yeast rolls and went by that.
K3, I just wrote down your mayo biscuits, will definitely try them. Will need to buy some self rising flour first unless I can make my own. I'll google that too. What would we do without our computers.
Rie...I added your recipe to the printer page of K3's biscuits.
10 cups of flour scares me and I don't have a tupperware bowl or any bowl with a burping lid. Can I cut the recipe in half? What would work instead of the burping tupperware?

Freda - I am sure your DGD will love that book. How old is she? The copy I bought is in very good condition and beautifully illustrated, also. I have no one to pass it down to. I don't think it's a book that would interest my grandson, but I guess you never know.

Bobbi - I will probably just bake my rolls at the temperature on the package for bread loaves, but just keep watching them since they won't take as long. If 16 pieces made slider size rolls, then I guess I would get around 10-12 hamburger size rolls.

Rie - I copied your bread recipe into my recipe file. I also don't have a tupperware bowl. If we knew how much time it normally takes the bowl to burp we could wrap the bowl tightly in plastic wrap and time it accordingly.

Karen3 - I also copied your recipe for the biscuits. I calculated the calories in the ingredients on FitDay so just divide by how many biscuits it makes. For the fat free ingredients it was 1043 calories and for full fat it was 1603.

Congrats to Maryea on the new grandchild and to Isabella on the coming grandchild.

Good Afternoon Girls,
This is taxigirl. I need to post on here more often. The days seem to be so short. By the time I get home and grab something to eat, it's time to go to bed and start over.
In a short 246 1/2 days I will be retired, and I'll be bugging you guys all the time.
I weighed the other day and have lost 4 lbs. and a couple of inches here and there, but the big thing I've noticed is how I look at food so much differently now. I've been trying some things I never tasted before, and a lot of new recipes.
I was channel surfing one evening and came across QVC right when they had their Ninja system. I ordered it and got it about a week ago. It came with two individual (blend and go) cups, a 40 oz. container and a 48 oz. container. I haven't even had those out yet. I've only used the to-go cups. I've had smoothies every morning with whatever fruit I have on hand. Delicious!
I'm giving my blender and food processor to my son. It even had a paddle attachment for bread and cookie dough.
We're finally having a "summer" day here in Portland. It's supposed to be 78-80 today, and then in the mid 70's through the weekend with chance of showers on and off.
Hope everyone is doing well, gotta get back to work.

whooo...If one reg 2" butermilk biscuit is 63.0 cal how can 12 be 1603? I figured with FF the biscuit was 52 cal?????????????????????

Rie and Karen3, those recipes look really unique. I've cut and pasted them so I can try them when I get home.

Mary, congratulations on the new baby. You must be thrilled.

I'm glad you're safe from the fires Donna and that Karen3 is safe from the storm.

Bobbi, here's a really good roll recipe. I use instant yeast and just throw everything into my large stand mixer and let it go for about 8-10 minutes. You can use oil or butter for the margarine. These make dinner rolls so make them bigger if you want burger buns. For half the recipe use 1 1/2 teaspoons yeast.

Air Buns
½ cup warm water
1 package yeast
1 teaspoon sugar

Let rise 10 minutes.

In a large bowl put:

½ cup sugar
½ cup shortening
2 teaspoons salt
2 teaspoons vinegar or lemon juice
3 ½ cups lukewarm water

Add risen yeast to above mixture. Stir in 9-10 cups of flour or enough to make a nice dough. Put in greased pan and let rise 2 hours. Kneed. Let rise 1 hour. Form into balls about ¾ inch thick. Put about 3 inches apart. Let rise until very light. Bake 350 degree oven for 15-20 minutes.


And here's a really easy and much faster recipe. These taste best right out of the oven. They are a cross between a biscuit and a roll.

Angel Biscuits
1 package instant yeast
2½ cups flour + more to mix in
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
⅓ cup melted margarine or oil
1 tablespoon sugar (brown or white)
1¼ cups warm milk or water
1 tablespoon lemon juice or vinegar

Mix all ingredients together including the yeast and stir all together. Add more flour to make a soft dough easy enough to handle. Turn out on floured table and knead for about 30 seconds (knead for about 2 or 3 minutes for a more bread-like texture) . Roll out ½ inch thick and cut with a biscuit cutter or form into rolls. Place on baking sheet and let rise about 30 minutes -1 hour or until double. Bake 375 degree oven about 10–15 minutes until golden brown.

To make Cinnamon Buns
:
Increase sugar to 3 tablespoons. Mix as above and roll out into a rectangle. Cover dough with margarine and sprinkle with a fairly thick layer of brown or white sugar. Sprinkle sugar with cinnamon. Cover with raisins if desired and roll up like a jelly roll. Cut buns about an inch thick and place in pan not quite touching. Let rise about 1 hour. Bake in 375 degree oven for about 15 minutes or until golden brown. Spread with glaze while still warm.

Glaze
Mix 1 cup icing sugar with 1 tablespoon soft margarine or oil and 2 tablespoons of water or milk. Add ½ teaspoon vanilla. If glaze is too thin add a little more icing sugar. If glaze is too thick add more liquid a few drops at a time until it is the right consistency.


I took everyone out for dinner today at East Side Marios. It's an Italian style restaurant. I wasn't sure where we were going to eat before we left and I'm sure glad I only ate a third of my entree. When I got home and checked the calories online it would have been 910 calories for the pasta dish I ordered. As it was we had all you can eat bread and salad. I forgot to order the dressing on the side, which I usually do and I did eat my share of the bread. Fortunately, I ate a light breakfast and we ate a late lunch or early supper so that one large meal is it for today. I did come in just under my calorie portion for the day so that's good.

We had RDF (rain, drizzle and fog) today and I was so cold I ended up buying a hoodie at Costco. I love that store. Of course, I only get to shop there once or twice a year. I was very good at avoiding most of the samples and only had 2 very small ones. I walked past the chocolate cover almond samples as fast as my short little legs could go while pushing the cart, lol. Now, I'm just waiting for one of my favourite TV shows to come on. It's Coronation Street, a British soap opera. Just love it.

Quick note: tupperware bread can be done in any sealed environment like a large mixing bowl sealed with plastic wrap. Depending on how warm it is, it takes about 2 hours to rise. Sometimes I put a little warm water in the sink and let the bowl sit there to speed it up.

We have fires in 5 different spots here in our state and they are getting out of control. A fire east of here took out lots of homes on the Northern Cheyenne Reservation. The closest fire to me is about 30 miles, started by lightning. It could be a long summer.

Karen, I hope that Debbie isn't causing flooding in your neck of the woods.

We had a lovely day. I was really tired last night and the kids were very rambuctious, mostly I think because I allowed them to get overtired. They had gotten up early, and had no nap and I think they really should have gone to bed about 7 pm. I knew it but it was just hard to make them go to bed when it was our first sleepover without mommy and it was still so light out. But by the time they got to bed they were wild esp the 5 year old. I had never seen them like that! But we got through it and they finally fell asleep and slept well but I didn't sleep much. Not because of them..just my usual cycles I guess. I got about 3 or 4 hours I'd say. At least they slept in until 8 and we had planned to take them swimming but because it's summer, and there's all the swimming lessons going on, family swim wasn't until 1 pm. So we played here at home this am, then went to the pool and there were so many people we had to get on the waiting list. We waited about an hour before we were allowed in. We were just about to leave when they called us. They played for about an hour in the pool then we went for ice cream before moma joined us. She came home with us and we chatted a while before they all left. It is so good to have my dd closer so we can be with her more.

Rie - The fires sound terrible! I hope things settle down soon.

Isabella - Thank you..yes we are excited about our news grandaughter! We hope to be able to visit her before long. GFY on walking by the chocolate covered almonds sample, but I have to say I wouldn't have. I figure I never buy things like that so I take a sample when I can. But then I'm not very successful at this losing weight thing either , am I?!!

Taxi - I enjoyed our nice day. When I got up I thought no way is the temp going to get that high but we got up to at least 78 last I heard!

Cajun - I am SO proud of you about the Snicker cake!! I hope I could have done that. I do occasionaly but not often when it's right in my house which is why I so rarely let things like that in. I have a hard enough time with just the regular food. Sheesh, I can overeat on peanut butter and jelly sandwiches!

Bobbi - This new one is our 7th grandaughter...we actually have 10 grandchildren and one "adopted" grandaughter..so a total of 11!! Christmas is getting more and more expensive! Esp as they start growing up and getting married themselves...Plus all those birthdays..

Slmn11 - You sound so much like me! I am guilty of doing all the things you mentioned! I do better for a while then slip back. I have to constantly be focused on my new habits and sometimes I just don't care enough I guess. I'm hoping the author will elaborate a bit on just what she means about fuel food...whether she means the healthy foods, getting our basic nutrition etc. or whether she means eating when we are actually hungry. I'm like you too that I often feel I just eat (esp snack) out of habit. However I do remember when I was raising my four children, and things were often stressful, that I ate more than ever...in fact that was the start of my really gaining weight. So I'm thinking I probably was doing emotional eating. I notice when I'm babysitting the grandchildren I eat more too...so wonder whether I some how subconsiously slip back into that "mother" role again to some degree and feel that stress again? I'm really trying hard to be a grandma now and not a mother (had trouble with that in the beginning of my grandmothering) but maybe some of those feelings are still there.

HealthyGinger - I'm sorry for the tears but I agree with the book that sometimes we have to let them out and feel the pain to be able to let it go and move on. I hope you will find healing apart from food. As I said above I'm sure some of my own eating has been to make myself feel better when I was fearful, felt unsupported and inadequate myself to handle everything. I wasn't aware of it at the time though. I wish now I'd found another way to handle things but that's where I was. Now I have to forgive myself and move on to become healthier physically and emotionally. I've come a long way and with God's help will continue despite my many slipups. Sometimes I feel I take one step forward and five backward all the time, but I guess that's the way I have to learn. The main thing is not to give up.

I can tell the excerpts from these books are touching our lives. I thought they would when I began to read them.

100 Days of Weight Loss by Linda Spangle...my reading today was on not forgetting to eat or skipping meals. This is not usually a problem for me, but I remember when I was working I sometimes didn't have time to eat a meal, then when I'd get home (late as I worked swing), I got in the habit of eating a whole lot of food before going to bed because I was hungry, and emotionally up often still feeling the stress of the shift. The food seemed to help me relax enough to go to sleep, but it also packed on a lot of pounds. The author talks about how some people think they are doing a good thing by skipping meals, or saving up calories before a big meal but really it usually works out just the opposite. She also recognizes that sometimes (as with me in those days) skipping a meal does not feel like a choice. She advises us to plan for these times and make sure we eat our planned meals and snacks so matter what is going on. Esp when a diabetic is on insulin they have to eat so if they can do that we can too. Write down when you plan to eat your meals and snacks and try to eat within 30 min of that time. If you tend to forget to eat, set an alarm to remind you it's time for fuel.

From If I'm So Smart, Why Can't I Lose Weight by Castillo (paraphrased)
The author continues about feelings. Each time you have an urge to eat when you are not hungry or overeat your fullness, stop and ask yourself what you are feeling. Don't just say I don't know, go in and find it. Then allow yourself to feel the feeling instead of eating. There's an interesting discussion on stress and anxiety...she says they are "cover" emotions...go deeper and find out what causes them. She says that living on stress is another way of running from life! We're afraid of feeling hurt so we feel fear of the emotion instead. Eating to calm down is an attempt to distract ourselves from the anxiety. The food struggle and the anxiety is a decoy. Again, it's all about allowing ourselves to feel our true feelings and connecting with ourselves. Anxiety is a choice and not a good one.
The worst feeling in the world is still just a feeling, nothing more.

She also says we need to distinguish between feelings and sensations. Sometimes our bodies are hungry for things other than food. If your physical hunger is above 0 level, you are probably hungry in this way. Go find what you need. See if you can satisfy it with something besides food. If you are unable to satisfy it, be willing to allow it. Hunger does not have to be a scary emotion. It is natural for us to be hungry for things we believe we want and need. No need to eat over it or run from it. We can sit and come to the conclusion that if we are hungry for companionship (or whatever) no amount of cheesecake will do the trick. Nothing can substitute for the love of another human being or our own self-love. Don't be afraid of your hungers.

Wow! Another interesting topic! There was more, so if you are struggling in this area, I recommend the book.

Rie, we have a high number of forest fires here too because of the unusually dry spring/summer. But we have rain for the next few days which should help on the island. I heard on the radio that there is a province wide ban on outdoor fires (of course) and a temporary ban on backyard fireworks. Canada Day is on Sunday and everyone is hoping for more rain until the weekend so the firework ban can be lifted. The worst fires are in the mainland Labrador part of the province and at least 2 communities have been evacuated. I'm on the Newfoundland island part of the province and we've had a few fires as well but none near me as of yet. I do hope you remain to keep safe.

Yesterday's restaurant meal did no harm and I was actually a few ounces lighter this morning than last. It's so hard eating the right things when on a holiday and today the oven and stove are going to be removed and the new one won't be installed for weeks to come. Of course, we won't be here for that entire time but it's going to be hard nevertheless.

I don't what I'll be doing today. I could help clean out cupboards if they'd get some boxes. Maybe, I'll fly the coup and do some shopping up the road, lol.

Well, breakfast is well over and I'm not downstairs yet. I'd better get dressed and try and get some order to my life. Have a great day!

Thanks for all the recipes and tips, I printed them all out. On the air bun recipe Isabela, you mix all the flour in with your mixer or mix until too stiff, work remaining flour in with your hands? What's instant yeast?

Karen3- How did you calculate the 52 cal per biscuit?

From Fitday I got
self rising fl 2 C 885 cal
ff milk 1 C 86 cal
ff mayo 6 T 72 cal

Did your biscuits come out 2 inches? And you got 12 of them? If so, I don't understand the discrepancy, but I like your calculation better than mine. LOL

Maryea - I don't recall ever forgetting to eat in all my 66 years! I may have skipped a meal, but believe me, I did not forget!

I keep a food log in a little notebook and enter it into Fitday periodically. In the past couple months my food choices and quanity have not been favorable...as shown on the scale, and I have not been entering my food into Fitday because I didn't want to see what I was really doing. I don't know why I did that, because entering the food would have opened my eyes to the truth and I might have stopped the bad behavior long before now. I have been entering a week at a time to get my Fitday account caught up, and I'm seeing some days I am over 2000 cal. To lose, I need to stay below 1500. The past couple days I have gone back to healthier eating, staying below the 1500. I feel fine. I don't feel hungry or deprived. I am going to be more diligent about entering my food daily. In fact, I have been entering breakfast and lunch and then planning dinner according to how many calories I have left for the day. It's amazing how little things add up. A bite here and a bite there. And I have been leaving a few calories for after dinner, because it seems to be inevitable that I will grab somethng in the evening. This is working for me, now if I can just keep it up!
