Everyons dinners look so amazing mine pale in comparison.
So last night I finally finished off the Quinoa caserole i'd made earlier in the week.
Today I made a lazy soup, mushroom soup base (salty but... vegetarian) with black eyed peas, and brown rice pasta (corn and pease too.. what can i say I love me some carb laden veggies. And a can of mushrooms, and then spices. It's super hearty so that should be my soup for the week.
Steamed salmon, 1 cup of brown rice, 2 cups of mixed veggies and a lemon, ginger, garlic dipping sauce with a tsp of soy sauce for added flavor. That with a 16 oz cup of green tea. it was good

baked chicken spiced with cayenne pepper and a bit of lemon juice, salt and pepper. once it was done cut it into chunks on top of a bed of romaine lettuce, baby spinach, green onion, diced tomato, 2 tablespoons of sunflower seeds and drizzled with balsamic vinaigrette. and for dessert a small serving of butter pecan ice cream (I know the dessert isn't healthy but I've been craving something sweet all week)

Tonight we will be having meatloaf made with grass fed beef and a million roasted veggies ground up and secretly mixed into it. For our obvious veggies we will have cauliflower with cheese sauce.
Mild italian pork burger (no bread), potato salad (with caesar dressing instead of mayo), and broccoli. I don't know how healthy this is, but it sure was filling.
CutsieMina ~ Im not sure if not having dinner is a bad thing or not, I wouldnt think its a bad thing but Im not 100%, I hope you find an answer to that question though
Tonight for dinner we're having pork chops but we're having them a new way so Im looking forward to see and tasting how it turns out, Our sides are scollop potatoes and frozen veggies but Im not sure what kind of frozen veggies they are
