Erin, GREAT job with your exercise. The weight will come off. Keep pushing forward.

What is everyone having for dinner? Please feel free to share your recipes.

Today, I am making grilled tilapia seasoned with chili powder, cumin, and pepper. Paired with a salad w/baby spinach, arugala, red romaine, green romaine, cucumbers, tomatoes, orang/red/yellow sweet tomatoes, and balsamic dressing (homemade 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, 1 teaspoon minced garlic, 1 pinch oregano, small pinch thyme, 1 pinch chives).

It has been a nice day off. Back to work tomorrow. I can't wait for the weekend!

Default Hope Im Not Too Late

I just joined and started my diet Sunday. This would be the perfect challenge for me! My current weight is 227/224/160. I would love to lose the 24 lbs before Christmas and every other pound lost would be a Christmas present to myself

I had a great dessert tonight....it was low point so I"m assuming it'd be pretty good calorie wise....my husband loved it and he doesn't follow a program and usually doesn't like those types of foods.....here goes: fruit quesidillas (?sp)

4 whole wheat tortillas
1/2c fat free cream cheese, room temp
1tbsp sugar (I used splenda)
1 tbsp granulated sugar (I omitted)
1tsp lemon juice
1tsp lemon zest
fruit of your choice (i used strawberries)

mix sugar, cream cheese, lemon juice and lemon zest together in a bowl
coat 1/2 of tortilla with 1/4th of above mixture
place fruit on top of cream cheese
fold in half
cook in pan until golden on one side. Flip (2 spatulas work well for the flip to keep everything in) and cook until golden on the other side
repeat for remaining 3 tortillas.

A serving is 1/2 of one tortilla (so recipe makes 8 servings).

It was great with a little bit of fat free cool whip.....it'd probably be great with peaches, cherries, apples or any other fruit that tastes good warm.

Wow lots of posts. I haven't been on for a few days. Where has the week gone? I have been so busy with work and the kids have had something after school every day this week so exercising after work like a promised myself has not quite gone as planned. However, every morning this week I have gotten up at 5am and done 10 min of yoga and 10 min of strength training on the Wii. Not my Jillian Michaels DVD but at least its something. So far this week according to my Wii scale (my bathroom scale broke) I am down almost 2 lbs!! I can't believe it! It is amazing how starting off my morning with even some very light exercise makes me more aware through the day what I am doing/eating.

This is my favorite WW recipe EVER -- my DH doesn't eat red meat, so we make it with ground chicken or turkey (not turkey breast or chicken breast -- too dry).

North African Meatball Stew

1 pound ground lean beef (5% fat or less)
2 TBSP finely chopped fresh cilantro
2 tsp ground cumin
2 tsp olive oil
1 onion, chopped
2 garlic cloves minced
1 cup diced tomatoes
¾ cup water
3 TBSP tomato paste
2 TBSP lemon juice
2 TBSP chopped fresh mint

Mix together beef, cilantro, 1 tsp cumin, salt and pepper in a large bowl until combined. With damp hands, shape mixture into 24 1 inch meatballs.
Heat oil in large nonstick skillet over medium heat. Add onion and cook, stirring until softened, about 5 minutes. Add garlic and cook stirring until fragrant, about 30 seconds. Stir in tomatoes, water, tomato paste, and remaining 1 tsp of cumin, salt and pepper to taste. Bring to boil
Add meatballs to skillet. Reduce heat and simmer, covered, until meatballs are cooked through and sauce is thickened. About 30 minutes. Stir in lemon juice and sprinkle with mint.


Serving Size = 6 Meatballs and 2/3 cup of sauce
Serves 4
Weight Watchers Points Plus = 5 Points

adaem, I am right there with you. Where has the week gone? Went by super fast! That is awesome you lost 2 lbs! GREAT! Every little bit helps, and I think working out in the morning is best, it keeps me going strong throughout the day.

Happy to announce I have lost 41.2 lbs (since July 1, 2011). Weighed in today at 203.2! Nice suprise! Tomorrow is my official weigh in day, can't wait to see what it is!

Whats on the menu for tonight? I am making baked spaghetti squash.

Cut spaghetti squash in half, length wise.
Rub olive oil on the center, sprinkle salt and pepper (I do not use salt)
Spray Pam on a cookie sheet
Place the spaghetti squash center side down
Bake in the oven for 25 mins (depending on size, you may need more time, just pull it out, and check it with a fork, if it is soft) at 375 degrees
When done, let it rest on stove for 10 mins
Use a fork to scrape the spaghetti squash out (looks like noodles)

Prepare spaghetti sauce (I use fresh tomatoes, herbs and spices), add cooked ground turkey (you can use beef or chicken).

Place spaghetti squash in a big bowl, add your spaghetti sauce and meat. Mix it.

Place the mixture into a square pan, top with 1/4 cup of mozzarella cheese, bake in the oven for 15 - 20 mins, at 375 degrees.

Yeah I am totally in. I set my goal for Valentines day but I like Christmas better. My b-day is Nov. 14th and if I am going to set a mini goal of having lost 25 lbs by then and then I will have a month to loose the last 5. I am a month into loosing 30lbs and as of today I am 13.6 down and 16 to go! YEAH I cannot wait to be half way there. 165 to 135 ( a weight I have not reached in over 10 yrs) I have struggled with keeping up the weight loss in the past but this time I am seeing results so I really want to keep going. If I keep going at 2 lbs off a week and 12 weeks until Christmas I think, I can do it and reach my b-day goal too.
So start weigth 164.8 current weight 151.2 Goal 135
Looking forward to doint this with you all!
