The last 2 nights I have had pita pizzas and they were amazing. Tonight I had broiled tilapia with homemade tartar sauce and steamed brocoli and cheese. YUM

Tonight I had homemade turkey chili and 2 corn muffins....the corn muffins were homemade with Bob's Red Mill corn muffin mix. In place of the eggs I used two egg whites + 1 tsp smart balance oil, and in place of the 1/4 cup of oil the recipe called for i used 1/4 cup natural sugar-free applesauce. Yum!

I had a salad with italian marinated chicken in it. Ohhh the chicken was so good I could of cared less about the lettuce lol.

Everyone sounds like they had a great dinner! Yummy!
My dinner is actually at work...since I wake up at noon...start working at 8 PM and get home at 430 AM.
Today's dinner was Chow Mein cup noddle...Yes, I know not so healthy but I didn't have time to cook today since I had to leave home early due to the horrible road.

Last night I made seared tuna.... was very good, and VERY fulfilling. It was only about 120 calories!~ I made some cucumber salad along with it.

Hmm.... so many good ideas from you ladies! I don't get to choose my dinner tonight, I'm nannying - so whatever their parents tell me to make, I'm making it! it's scary, but what can ya do. At least I get to cook whatever dinner is so I can make mine somewhat healthier if possible.

Tonight we (or I) am making chicken fajitas with onions and bell peppers, with sides of fat free refried beans and some homemade cheesy rice (with reduced fat cheese and salsa). And a Blue Bunny 50 calorie ice cream bar for dessert (They're big, huge, sugar free and FABULOUS. Makes me feel like I've eaten a big dessert when I haven't.)

last night i made tilapia in coconut curry with broccoli, orange bell peppers, hothouse peppers, ginger, onions, and garlic over wide thai rice noodles. i don't really like sweets so no dessert.
not sure about tonight. maybe leftovers. i'm starving already though because i had a veggie brunch wrap at 10:30. wish i'd brought a snack to work. gonna try and push through til 5. ugh.

tonight I'm making the cover recipe from this last issue of Clean Eating. It's turkey and asparagus whole wheat penne dish that looks delicious! For dessert just simple fresh pineapple :-)
