I am soooo looking forward to lunch -

Spaghetti squash (& lots of it) with an incredible mix of zucchini chunks, onion chunks, chicken breast chunks, button mushrooms, stewed tomato, cooked with lots of fresh garlic & crushed red pepper.

New week = new lunch!

This week I've made home made falafel which I'm alternating putting in a whole wheat pita or wrap with a bit of feta and diced tomatoes. Super yum. I've also made a crazy pasta salad to have on the side with tri-color pasta, tons of veggies (carrots, peppers, tomatoes, cucumbers) low fat cheese and a light Italian dressing. This week for each sandwich there is 4 falafel balls, 1 serving of feta and 1 diced tomatoes. I heat the falafel in the microwave at work just a bit and then make the sandwich. I bring 1 cup of the pasta salad.

PS - Robin this sounds delicious. I'm growing spaghetti squash this year so I'm keeping this one for when they are ready!

Not sure yet what I'm having for lunch, but I need to decide soon. I'm thinking maybe heading to Potbelly Sandwich Works and getting A Wreck salad (salami, roast beef, ham, egg, veggies, greens).

Best salad I ever had I made a week or so ago. Bed of greens, with sliced grapes and tomatoes, topped with a bit of blue cheese and some pistachios. ANd then... hot microwaved asparagus on top. The asparagus melted the cheese, and it was amazingly numilicious. It was one of those "wow I didn't think it would turn out THAT good" surprises.

This sounds really delicious but I would be afraid to eat at some plance called Potbelly, I have one of my very own thank you!!

I am having half a whole wheat pita with a little bit of light margarine a few slices of low fat chicken slices (deli meat) and lettuce. On the side a handful of grape tomatoes. Yummm!

I get lunch out every day as I'm too lazy to pack a lunch in the morning. I generally get something healthy and then guestimate on the calories. Today I had a tuna wrap with tomatoes, lettuce, and onion. It comes with a small bag of chips and a pickle spear.

Hmm... never thought of it that way before... But actually, it's named after the stove that is their logo and that decorates the lunchroom.

They have very good, inexpensive sandwiches and salads. And even though it's right downtown, it's not inundated by busloads of touristy kids at lunchtime. This is the time of year that downtown workers in DC do NOT eat at the food courts... it's an absolute madhouse... so I've been "rediscovering" last summer's favorite sandwich places, like Potbelly.

I cooked a small sirloin steak (cut into strips), sauteed some onions, made a sauce out of beef broth and balsamic vinegar, tossed in a whole bag of baby spinach to wilt, and tossed it all into some whole wheat penne. It was delish and my sweetie said this recipe is a definite keeper.
