I would die a thousand deaths for some cooked spinach! But I also really love (raw) broccoli and carrots I used to hate all veggies, even well into high school. For some reason about a year ago I just started forcing myself to eat them, and then once I started dieting I actually started to really love them (probably because they made me feel good about myself for eating them and I could eat a bunch without going over on calories).

I see a lot of us share the same favorite vegetables. Mine are squash (especially yellow summer squash), collard greens, broccoli, asparagus, mushrooms, corn, and sweet potato. I remember when I could go weeks, even months without eating a vegetable but now I actually will crave them.

Any type of squash (HOW has spaghetti squash not been specifically mentioned yet???), red/green/yellow peppers cooked with onions, portabella mushrooms, and brussel sprouts! Yummmm.

In addition to the usual suspects, I am particularly fond of lotus root. I also love Jerusalem artichokes (sun chokes), jicama, and celery root.

But I do love my greens too; they just tend to be less obscure (broccoli, spinach, asparagus, etc).

And I never met a roasted veggie that I didn't love.

asparagus! I love to put it in a baking dish with a light sprinkle of balsamic vinegar and a slight sprinkle of soy sauce and bake to my liking. I like it to still be a little crisp but my mom likes it softer. Anyone who thinks they don't like asparagus might try it that way. My fiance didn't think he liked it until I made it that way. The soy sauce gives it a hint of a meaty flavor.

I like almost all veggies. DO NOT LIKE beets or sourkraut at all! And I don't care for radishes, brussel sprouts, or artichokes much.

Well, I would have to say ONIONS must be my favorite since I use them in so many ways all the time, but I like others just as much like ...

-- mushrooms
-- green beans
-- garlic
-- celery
-- carrots
-- cucumbers
-- cabbage
-- lettuce
-- broccoli
-- cauliflower
-- new potatoes
-- sweet potatoes
-- pumpkin
-- turnips
-- zucchini

Tomatoes & Corn are in my top 5 faves even if tomatoes are technically a fruit, and corn is a grain. I eat these all the time. Are olives a veggie? Love them too!
