Good afternoon everyone! It's been a crazy 2 weeks so didn't get much time to drop and see how everyone's doing. Had WI on Tuesday and lost a whopping 5.2 lbs last week - CrAzY! I'm so close to the 30 lb down mark... yippee!

Tried the Vanilla Shake mix yesterday - not good! It's almost too sweet for my taste. I prefer the Chocolate ones but my clinic was out of the powder packs. Hope they have some there on Tuesday for my WI.

Going to have to try those zucchini muffins - they sound yummy!

I've been making "Spinach Pesto Crackers" using the IP Potatoes (had them for lunch with steamed broccoli) and they are yummy! Made my own pesto using spinach and basil and it's super tasty! I'll post the recipe in the recipe thread for anyone to try.

Have a great OP weekend everyone! Off to make some fish for dinner!

Thanks for the suggestions, Jo. I am not a huge fan of pumpkin, but this is all about going outside of my comfort zone. So I'm looking at the different recipes, and will definitely try something out and let you know when I post. It might be a few days, since I'm not sure I have all the ingredients.

I am definitely looking up the cauliflower tortilla recipe!

I just used the crispy rice cereal to make pancakes. I added some pumpkin pie spice, they were delicious. Filled the "fall food" craving I thought I was missing out on! I also had black coffe with a few sprinkles of the pumpkin pie spice. Great start to my day!

I was going to bump the cauliflower pancake thread but just decided to link it here (too many "bumps" with no new info in a thread bugs me for some reason - in the same way duplicate threads bug me ).

Since cauliflower pancakes don't contain an IP packet, I use them for snacks to "get me thru" when I'm SUPER hungry.

I learned that I could put my veggies throughout the day and use salad at with dinner (putting my dinner meat on a BIG bed of lettuce) to fill me up

I usually have spinach in my morning smoothie
2 c veggies with lunch
1 c veggies snack (raw veggies, rhubarb "custard", or a cauliflower pancake)
and then big salad with meat for dinner.

Eating this way has gotten me thru MANY hungry days. Not all of my days are "hungry" days but I know things need to change-up a little if I'm feeling starving.

So, yesterday, my alumni club had a winery day.

I joined in the fun...water with red Mio (I'm actually using Stur, which is stevia-sweetened) . I took cucumbers, asparagus guacamole, and garlic breadstix made from potato packet).

On the drive home, it was WONDERFUL we had a 100% sober DD because there was a state patrol sobriety checkpoint . Right before they checked me, they arrested 2 drivers in other cars. I told the officer I was the DD, hadn't had a drink in over a year due to a weight loss diet. He checked the tracking of my eyes and waved me thru.


See? there are MANY bonuses to IP!

Did you use the whole egg in the cauliflower pancake, or did you just use the egg whites? This sounds really good. Thanks all for sharing!
