They don't have as much protein as the 8 oz of meat, but I was told 2 large eggs is fine. I have also found that 'Eggland's Best' have more protein than 'regular' eggs, as listed on their box. Either way, I wouldn't do it everyday.
You can scramble with the olive oil, as long as that is your alloted oil for the day. I found that if I used a really good non-stick pan, and low heat, I could squirt a little water on it to get started, then pour the beaten eggs in and gently cook, scraping with a rubber spatula. That way, you can use your oil for something else. Low heat is the key to having it not stick.
