I've been having egg salad and meat (sweet Italian sausage and/or bacon) wraps all week. I had some eggs that needed used up and leftover meat from the weekend's meals.

This has been my two week daily breakfast. I think eggs are so easy to hard boil/peel with the instant pot, that I just keep them on hand all the time now.

I enjoy threads like this for the new ideas and variety.

Lately I've been having this breakfast a lot:

1 serving of oatmeal, made with 3/4 water and a 1/4milk. Dash of salt. When done, about 1/2 T of butter stirred in. I use Kerrygold Irish Butter bc it's the most delicious butter ever.

Then on top, I place an egg that I zapped in the microwave in my little egg cooker device. A sunny-side up egg would work just as well.

This is fast to pull together and I enjoy the flavors. Butter and salt, what's not to like?

My body really likes this. It energizes me and keeps my hunger away until at least lunch time and often longer. I'm the sort who has to start off my day with low sugar foods or I'm really hungry all day. The fiber, fat, and protein help me drop weight.

I had a two egg omelet with a serving of diced potatoes and some onions mixed in, and about a T of butter.

It was tasty but didn't keep me full as long as the oatmeal and egg combo does.
