And also won't eat any veggies, and I feel like a terrible person because I know if it wasn't for me he'd eat horribly. I hate making separate meals, but he won't cook something else for himself to go with the chicken so I'll end up encouraging him to eat and/or making something else for him (like, a potato, or ANYTHING).

Didn't have salad. I was out of dressing. Sauted some seasoned, cubed chicken in palm oil, added onions and mushrooms, lemon juice, white wine, parsley....threw in a bunch of spinach and some parm cheese at the end and put it on top of zucchini noodles with plenty of hot sauce. Man, I wish I had feta cheese for that.

Not feeling very well Had a really nice dinner planned out but just am not up to making anything so had gf noodle soup with a hard boiled egg.

I hope you are feeling better soon Dotti.

My dinner was a bit indulgent tonight. I"ve been a bit hungry today even before i went running.

So i had 4 big tsp of sour cream in my dinner and before it.

I cooked 1 cup pasta with a yummy mushroom sauce made like this.

1 cup sliced mushrooms
a lot of parsley, probably more than half a cup.
a splash of white wine
1.5 tsp olive oil
2 tsp sour cream

So sautee the mushrooms in the oil. When they are soft, put in the wine and cook reduce it a few minutes with high heat. (if you don't do this, the wine tastes awful). Add in the parsley. Mix till limp, then add the cream. Heat through. Add in the fresh cooked pasta. Heat through. Tip into plate and cover with a good grind of black pepper and 1tbsp grated parmesan.

So i had a banana later and probably one earlier.
A glass of white wine earlier too.

Thanks Pattience! I feel a lot better, but still kind of weird Go from feeling nauseous to having these super intense hunger pains. Really random. At least the migraine is gone though.

Went out with a friend to a vietnamese place I really like and got the tofu curry and rice.

Had turkey burgers with mushrooms in them (thanks, Munchy!) and holy cow they were good! The boyfriend said, "They're almost too moist." He liked them, I liked them, I will definitely be making them that way again (and I still have two patties frozen in the freezer).

Also had a side of mac and cheese. Plus I had two wings and a small salad with oil & vinegar at my work meeting before that.

nonameslob ~ I'll post the Mushroom Soup pork chop recipe when my mom gets home, Its her recipe and Im not quite sure how she makes it but I can post the Zucchini Parmesan Bites recipe

Zucchini Parmesan Bites

2 Medium Zucchini's

1/4 Cup Freshly grated parmesan cheese

1/4 Cup Bread crumbs

1 Table Spoon Olive Oil

Salt & Ground Pepper

Veg. Oil for the cookie sheet

Directions:

1. Pre heat oven to 450. Grease a baking sheet with Veg. Oil.
2. Wash and dry zucchini, Slice zucchini into 1/4 inch thick slices, In a Medium bowl toss the zucchini with the olive oil.
3. In a small bowl, combine the parmesan,bread crumbs,dash of salt and pepper. Roll and coat the zucchini slices into the parmesan mixture. Press the coating to stick. Place in a single layer on the prepared cooking sheet. Sprinkle the extra parmesan mixture on top of zucchini.
4. Bake until browned and crisp on the outside about 25 to 30 mins. Transfer the zucchini to a plate and serve immediately.

Terra i love the sound of those zucchini bites. I"m definitely trying those one day. Eggplant done this way is also very good but the eggplant needs to be salted for half an hour first to take out a lot of the water.

Last night i had 2 cups of a rough and ready yellow split pea soup i made. The only ingredients were split peas, onions, salt and little oil and water.

I'd had quite a lot of coconut earlier.

1 Glass of white wine.

Made the mistake of leaving dinner up to the bf He loves fresh and easy and I hate it bc it really doesn't have anything for me(at least the express one by his house doesn't, but I've never had good luck with them considering my special dietary needs). Anyway, had some vegetable dish from there and a salad with tofu and some olive oil. Doesn't sounds bad, but was so bland. At least it was healthy I was just grumpy from my long day and wanted something more substantial I guess.

For dessert I had some pudding.
