I had chicken tenderloin with sautéed onions, garlic, tomatoes and spinach spritzed with lemon, over lemony garlic zucchini noodles, topped with feta cheese...and plenty of hot sauce.
Last night I had a 100 calorie GF wrap with chicken, broccoli slaw, light mayo, dijon, and picamas. It was HOT out!
Oh, that sounds delish! I'm going to have to start thinking up some hot-weather food soon. Haven't turned the AC on yet, but the house got really warm when I made dinner last night My slow cooker and rice cooker are gonna be getting a lot of use soon...
dinner usually is some sort of meat and some sort of vegetable for me, along with something else for the rest of the family to eat (rice, etc)....i really love to make zucchini noodles or yellow squash noodles to go with dinner and lately i'm into sauteed red cabbage as well...so dinner might be chicken and veggies, or last night was sausage and cabbage....
today the kids asked for pizza...so i will be eating the toppings off of pizza LOL...not the healthiest choice or i might not eat anything until later because DH and i have places to go tonight
Its such a challenge for my poor brain to remember what i ate some hours ago.

2 cups pumpkin soup before going out
and when i returned
1/2 cup stewed plums and 1/2 cup home made yoghurt
My Pumpkin soup with ginger recipe:
about 1/5 kilos pumpkin
3 potatoes
celery uncut so most can be fished out later
2 onions
about 1inch of fresh ginger
all spice
1 litre of water
salt to taste
Cook in pressure cooker for about 20 minutes. Remove celery tops and most of the rest. Celery will taint the flavour of the soup if too much of it is used. Blend the rest till smooth.
Sometimes i like to put in a couple of spoons of natural yoghurt to serve.
You could also use milk instead of water for a creamier soup, or some part milk.
Nonameslob, I'm stealing your idea. I make zucchini noodles all the time, but lemony garlic sauce, mmm. I think I'd put some sauteed scallops on the top - maybe tonight!
Last night we had mushroom/spinach/turkey burgers with baked curly sweet potato fries. My burger was topped with sauteed mushroom and onions, fried peppers, 2% cheese, picamayo (Guatemalan hot sauce mixed with mayo), and wrapped in lettuce. Messy, but worth it.

I actually just added lemon zest and garlic directly to the noodles while I dry fried them, then topped them with everything else. But a sauce on top would be yummy! OMG scallops, my favorite!

Last night I had Asian Lettuce Cups - ground chicken and water chestnuts in a basic stir-fry sauce, spooned into "lettuce cups" and garnished with peanuts. (One of my favorite recipes. So simple and just loaded with flavor.) Plus, raspberries.
Tonight I had a boneless chicken breast stuffed with goat cheese and chipotle peppers in adobo sauce. And a salad made with celery and apples with a lemon-mustard vinaigrette, topped with toasted walnuts. A simply excellent combination of taste and texture. Perfection.
