A light salad tonight. Garden-grown romaine lettuce with panfried chicken thighs, honey dijon dressing, and a few grates of mozzarella cheese.

Simple. Ice Water and a lean hamburger with lettuce, tomato, and dijon mustard. No bun.

Last night I had a baby kale/baby spinach salad with cucumbers and mushrooms and a piece of thyme rubbed grilled steak.

Tonight I plan to make spaghetti squash with artichoke/spinach sauce for lunches, but I may just freeze 4 portions and keep two out for the boyfriend and me. The little one is having a camp out in the neighbor's backyard, complete with dinner cooked in the firepit!

Made some veggie patties and a loaf to freeze for dinners for the next week. I was craving potatoes for some reason(I'm usually not that into them) so I had a baked potato, a veggie pattie, and some daiya. Also had a hard boiled egg. Was a yummy dinner and I'm feeling content Was a -3 and ended +3.

I think I'll make shrimp with spaghetti and pesto (made up a batch last night), probably a mix of zoodles with spaghetti for me.

Come on over! Your mussels sound delicious. I make mine like this most of the time, but it's not often since I hate to clean the mussels one by one.

Last night I just had jalapeno tuna with rice crackers. Tonight I'll probably ACTUALLY cook.

Made a squash and tofu curry and had that along with rice. I skipped lunch because I ate a big breakfast, so was hungry for dinner.
Was a -3 and ended +3. The curry was very filling and pretty low calories
Now I'm going for a little walk.

I had curry too, probably not low cal chicken and potato curry over jasmine rice with peas. So good and the slow cooker and rice cooker did all the hard work!
