My favorite vegetable is cauliflower, but I must say that there are tons of good vegetables that I have not tried. What's your favorite vegetable?

Green peppers... true they make your breath stink a little bit... but there's something about their crunch that gets me :)

I love them all, except lima beans. My current go-to veggies are eggplant and mushrooms.

My favorite lately is a dark, leafy green salad with real vinaigrette. But I'm fond of most veggies, and my favorite changes all the time. I really like cucumber - to munch on or to chop on top of things. I like broccoli in things, but I'm not crazy about just steamed or roasted broccoli.

I would really love to say corn...with a lot of butter :)

Carrots are a favorite of mine. cooked or raw.

Broccoli is also high on the list.

Sweet potatos, too. I like mine baked then sprinkled with cinnamon.

It's a toss up between
buttercup squash & sugar snap peas

Most cooked veggies I just can't stomach besides corn, corn on the cob preferred. I do love raw carrots, celery, green peppers and mushrooms.

Hmm. Carrots! Followed by green beans, broccoli, and tomatoes. Potatoes and sweet potatoes are even above carrots, but I try not to eat them too much - too starchy, but yummy.

Asian veggies like..
green onion

and anything leafy and green, chard, kale, brussel sprouts. Seriously I LOVE my veggies.

I haven't met a veggie I didn't like...if you make it I will eat it!

Lately I've become obsessed over zucchini. Sliced thin, lightly sauteed (just a quick spritz of oil--the less you use the more crisp it will stay), & just as it's done sprinkle some parmesan cheese over it. If you haven't had fried food in forever it will remind you of fried zucchini. My whole family loves it (well, not the hubby but that just means more for the rest of us!).

I love brussel sprouts. Cut them into strips, steam for a few minutes then saute with some leeks and it's delicious!

Chard, it another fav, steamed and sautéed. I also love roasted broccoli. The only veggies I dislike are green peppers and mushrooms. So I'll eat just about anything.

Gosh, hard to decide.

I love the versatility of the squashes--subbing them for pasta, pureeing for soups, etc.

I love the taste of sauteed brocc. with my eggwhites and onions.

I love smashed cauliflower with all the fixin's in it. (5 calorie butter, diced ham, green onions, parmasean)

Yes it does! I like Kohlrabi too, it's really tasty raw or roasted.

I don't think there is vegetable out there that I don't like, but right now I'm quite fond of greens like kale and spinach. Although cauliflower and brussel sprouts are way up there too.

I love my sprouts! brocolli! :D wilted baby spinach.
OMG I love baby corn with baby courgette in a stiry fry...
fried mushrooms, healthily fried....
red cabbage~ god I love it!

I'm a salad freak..probably eat them most days with lettuce, tomato, onion..

And I love onions and mushrooms sauteed together..

And a new favorite of mine is asparagus.

kale! any kind of kale. red kale, green kale, white russian kale, lacinato kale, i love them all! kale is probably the only food i eat every single day of the year - it's my favourite FOOD, not just my favourite vegetable!

runners up for me are spinach, rainbow chard, turnips, in-season asparagus, cabbage, and romanesco broccoli!

naama - yes, kohlrabi exists in the states! we sell locally grown kohlrabi at the food co-op i work at right here in urbana, illinois!

I LOVE them all, but kale (in all forms, like you, seidlet) is my top with broccoli and cauliflower close by!

South Beach Mashed Cauliflower is my current favorite :) Followed by oven roasted egg plant and red onion. Can't get enough of those.

Brussel sprouts the way my husband fixes them - blanche, saute in a spritz of olive oil then add toasted then ground cumin seed.

Baked yams, wow, just about anything.

Found a new Love for Eggplant. Egg plant parmesan . Cut up egg plant and dip egg plant in your choice, egg whites, milk, soymilk, egg substitute, egg or oil. and bread with bread crumbs put on baking sheet spray both sides of egg plant with spray and bake at 375 degrees, turning at least 2 times until done. You can use soy cheese or regular mozzerella and melt on egg plant, Then add favorite sauce on top. One of my favorite.:)

I love them all as well. Since we are in the season now I am of the thought that my incredible home grown tomatoes with a tangy sweetness are my favorite (though technically a fruit?) and the yellow corn from the stand down the road - so sweet and yet corny I would not trade it for the most delectable dessert

I like broccoli, peas, cucumbers and kale chips--and onions, especially green onions. Peppers are good too, and spinach. It just has to be the right dish (I am vegetably challenged).

I also like mushrooms a lot--but they are fungi (vegetables?).

Tommy--tomatoes are fruit but I think you can eat them like vegs...buuuuut corn is definitely a grain! I also love fresh corn, though. Yum.

Edit--I forgot cabbage! So versatile, cheap, and good!

I LOVE Asparagus. I could literally eat Asparagus all day long. I also love green beans, squash, lima beans, and spinach. :)

Broccoli. I used to loathe it as a kid, but now I'll eat it as a snack if I'm hungry. Plus, my mother has the best recipe for a bake with the stuff.

I like most veg but my favourite is sugar snap peas, raw. 2nd favourite is tomatoes but only the really tasty ones. So I enjoy them far more in the summer when I can pick them out my greenhouse.

I've never taken the time to designate my favoirte fruits/vegetables. I've always wanted to try dragonfruit, passionfruit, and miracle fruit, though. I would like to try vegetable like leeks, kale, and brusselssprouts.
I like all fruits and all vegetables except for potatoes, but if I could only choose one of each...:D:jig:

mushrooms are my all time favorite then I like red, orange, and yellow bell peppers, carrots, zucchini(I just discovered how much I like it last night), eggplant, edamame, onions...that's about all I have enjoyed so far but I am looking to expand this list

caramelized onions and green peppers are sooooooooooo good. I also like raw green peppers, zucchini, snap peas, broccoli and cauliflower (prepared a lot of ways). I will dip raw vegetables in a proportion of a good dip. I also love asparagus. Bean sprouts and alphalpha sprouts are starting to rank high for me too.

Also Thighs Be Gone - congrats on losing 100 lbs! I hope to make it there one day.

I would die a thousand deaths for some cooked spinach! But I also really love (raw) broccoli and carrots :) I used to hate all veggies, even well into high school. For some reason about a year ago I just started forcing myself to eat them, and then once I started dieting I actually started to really love them (probably because they made me feel good about myself for eating them and I could eat a bunch without going over on calories).

I see a lot of us share the same favorite vegetables. Mine are squash (especially yellow summer squash), collard greens, broccoli, asparagus, mushrooms, corn, and sweet potato. I remember when I could go weeks, even months without eating a vegetable but now I actually will crave them.

In addition to the usual suspects, I am particularly fond of lotus root. I also love Jerusalem artichokes (sun chokes), jicama, and celery root.

But I do love my greens too; they just tend to be less obscure (broccoli, spinach, asparagus, etc).

And I never met a roasted veggie that I didn't love.

asparagus! I love to put it in a baking dish with a light sprinkle of balsamic vinegar and a slight sprinkle of soy sauce and bake to my liking. I like it to still be a little crisp but my mom likes it softer. Anyone who thinks they don't like asparagus might try it that way. My fiance didn't think he liked it until I made it that way. The soy sauce gives it a hint of a meaty flavor.

I like almost all veggies. DO NOT LIKE beets or sourkraut at all! And I don't care for radishes, brussel sprouts, or artichokes much.

Tomatoes & Corn are in my top 5 faves even if tomatoes are technically a fruit, and corn is a grain. I eat these all the time. Are olives a veggie? Love them too! :D

Hubby and I were just talking last night about vegetables. I LOVE vegetables and always have. I also realized that there isn't a single vegetable I've tried I haven't liked.

Favorites? Too many to say - and it depends on how they are cooked, but. I love brussel sprouts - roasted with a bit of olive oil yum? That is just divine! But anything really - green beans, eggplants, carrots, zucchini, etc.

The only thing I reallllly don't like is overcooked veggies. Way to turn something I love into something gross - yuck!

Pumpkins are AMAZING. I literally can put pumpkin in everything and it makes it better. Buckwheat pancakes? Add some pumpkin. Coffee? Add some pumpkin. Hot cocoa? Pumpkin. Smoothie? Pumpkin.

Okay, I don't eat pumpkin all day but I definitely love it. Beyond that I adore brussel sprouts, spinach, broccoli, cauliflower, carrots, sweet potatoes, cabbage and lettuce. Oh mushrooms rock too, but I do believe they are not a vegetable.

If I am to be completely honest, I would say my favorite veggies are potatoes. I love them every way they can be prepared. You can do no wrong!

However, for a veggie that is actually good for me, I love asparagus!! And baby carrots. And cucumbers in vinegar. I can't stop lol

Hmm...I love *almost* all veggies. I'm not crazy about cauliflower and there's a bitter gourd that's used in some Indian cooking that I actually didn't like, but I guess I'd try it again.

Favourite: soooo hard to choose. Leafy greens? I adore salads. Okra...stewed tomato and okra...yummmy!

But I also love doing veggie laden crock pot stews. Tonight I'll have an italian pork casserole with fennel, onion, celery, carrot, sweet potato, potato, butternut squash, yellow pepper, mushrooms, white beans and a few sundried tomatoes. Delish!

Anything with eggplant or avocado* in it automatically gets a second look. I almost feel like I'm cheating with them though because my brain thinks "avocado = tastes buttery" and "eggplant = oily and crispy, or beefy".

* I guess "technically" not a veggie, but everybody considers it one.

Sweet onions are at the top of the list. I don't think I could cook without having onions.

Green beans, corn, salad fixings, asparagus, brussel sprouts, and potatoes which I think should be a food group by themselves but which I now limit because they are so high in carbs.

The challenge hasn't been eating lots of veggies, the challenge has been learning how to cook them in ways that don't add useless calories.

I think my favorite is celery cause it's good with dip, hummus, peanut butter, chicken, etc. Also, orange bell peppers are so so good!

Favorite veggie is cauliflower! Others I like broccoli (cooked only), cabbage, potatoes (of course), cucumbers, all kinds of lettuce, tomatoes (fruit I know! LOL), asparagus, bell peppers, okra, green beans (fresh). Those are the main ones I eat/like. I do try new ones from time to time but like to stick to my favorites!

I tried a new fresh veggie this week called ramps! They are baby onions with green leaves and they are delicious! I also like celery, carrots, asparagus, cucumbers, romaine lettuce, squash and potatoes. :)

I wish I could have my corn, soy, tomatoes and legumes but a skin prick test revealed I am allergic!! :?:
