FatGirlTale, what can we do to help you get your enthusiasm back? I know that I sometimes go through times when my enthusaism falls flat too and it helps to have someone there.... we're here for you.... so what can we do for you?

Welcome back, Chelly, and congrats on your 1.6lb loss for the month. and for not gaining during your week at home. What kinds of workouts are you doing?

Nancy, how did you end up fixing your chicken yesterday? I'm always on the lookout for a new way to make chicken. It can get old really fast if you only cook it the same ways all the time. I have a new chicken recipe that is not only tasty but also super easy to make. Plus it's made in the slowcooker so you can put in on in the morning before work and dinner's ready when ya get home.

Ok... cut up assorted veggies (I use carrots, celery and onions, my friend puts in red potatoes) and put in the bottom of the slow cooker. place the chicken on top of the veggies (I use frozen because it cooks for over 8 hours, but my friend uses thawed because hers cooks for less than 5 hours). add seasonings and herbs to your taste (My friend and I both use salt, black pepper and basil). Then pour enough water over the chicken to cover the veggies but not the chicken. Cover and set on low for 5 to 8 hours. If you're really good at making gravy you might be able to do what my friend does and make a brothy gravey to go over the veggies and chicken. I am not good with gravies so I don't.

Well, I guess I've goofed off enough for the morning... I gotta get back to the bills. Have a good day!!

Nancy-
I am walking 3 miles every day that it doesn't rain and on days it does I do about 45 minutes of Leslie DVDs with the 5 pound weights I bought

chrissy that sounds good! I have a recipe for a chicken curry in the cockpot that I tried a few weeks ago it was great too.
Ok last night here is what I did for my chicken It was un-fried chicken but had to improvise. let me see if I can remember all the ingreds 3pt per serv

heat oven 375
4 chicken breasts (boneless)
1/4C ff mayo
2t lemon zest
s & p
2T dijon mustard
4 drops hot sauce
crushed corn flakes---did not have any so I put some fiber-one in a blender to make a bread type crumb

mix mayo, lemon, mustard, hot sauce, s&p. together. spray baking sheet with non-stick spray. coat chicken with mayo mix, then dip in cornflakes and put on baking sheet. spray tops of chicken with non-stick spray and bake approx 30 min

ya know it tasted pretty good with the fiber one

Congrats, Nancy!!! 2.5lbs.... that's great!!!

Your "un-fried" chicken sounds really tasty.... I don't have any corn flakes either so I wonder what it would taste like if I used bran flakes instead.... I might have to try that with tomorrow night's chicken. Thanks, Nancy!

OK... so does anyone have a good salmon recipe that's simple enough for someone who's never cooked fish at home? I'm trying to bring new foods into my menu and I really like fish but I've never been brave enough to try it at home. Well... I guess that's not true... I tried to make tilapia (sp) once and it turned out so very VERY bad that I've not tried to make fish again.

Oh chrissy cooking fish can be real easy and I live in salmon country. try this:
take your salmon fillet/steak or however you buy it. put on broilier pan, put a pat or two of butter and sprinkle with lemon pepper you can broil for 10min or bake for 15...it is done when the meat can be flaked with a fork and is not so red. Another way is to mix a bit of brown suger, soy sauce, dill, & fresh lemon juice and put on fish and cook the same way.

I also have some sure fire ways to cook talipia if you want to try it again

And I bet the bran flakes will work great!

Chrissy - my favorite fish recipe (especially salmon) is just a heavy sprinkling of old bay, cover lightly and bake 15 (may vary a little - depends on the fish). The lemon/butter/pepper thing is great too, have done that many times.

Fatgirltale – kudos for the biking. I don’t think I could do it though – 20 miles is a hard sweaty ride! Hang in there – you can keep this up. Look how well you’ve done and be strong until your enthusiasm returns.

I've had a good week. Lost 1.6 lbs - All new job ideas are apparently up in the air for now. There's this other nurse, with same education but tons more experience that keeps applying for the same jobs I do, then hemming and hawing (as rumor has it) about acceptint them. If the big dog would get settled I might have more of a chance! I'm told she has declined one that I should be the next best choice for. So maybe it ain't over.

Tonight I'm experiencing the urge to binge - PMS sux. I've tried to eat acceptable - and think I have, but dang I could pack away a bigA cheesy bacon burger right now - with onions, and a giant hot fudge sundae diabetes in a bowl kind of dessert. But, I won't. I told myself if I didn't stop after my baked chips (yes, I counted them out and all that) that I'd whoop out my list of binge busters (things to do instead to keep from eating) and tackle some other things. Looks like I'm outta here to get out my binge busters list afterall. ugh.

Arkansas Kel we have all experienced the binge bug...it is so hard to get around it but just pat yourself on the back for not giving in! As for your career, to bad you are not in my neck of the woods. They are so short of nurses that are recuriting them right out of school as soon as they can pass the board exams and then they can pick and choose there days/hours and usually and very good salary with a bonus just to commit!---hey and great loss for the week

Today was a good day for me..I ate right and did my exercise I even added some ankle weights while I did my 5 mile walk...thought I was going to die but I finished!

tomorrow I am going to do the same 5mile dvd and put the weights on my wrists and see what happens maybe I will alternate them.. was getting bored and needed to try something new and this wa the best I could come up with

well a great chickie on the exercise thread told me it was not good for me to wear weights doing that kind of walking .very bad for the joints and back so I tried them on my hands tonight and got through 2 miles but some of the arm movements are to fast when I had the weights on... So I will try something different tomorrow

Had a good day so far and tonight went to papa murphys and bought pizza...how many points would you say this one is....veggie d-lite. 1/2 the sauce, NO cheese, onion, olive, peppers. Then when I got it home I added some garlic and about 3T parm. cheese

Well, the binge bug is still hanging with me. PMS - ugh. It's getting better. However, I learned to not eat nachos and drive! Had a busy night, was driving home eating leftover lunchbox nachos (yes, WW friendly - points had already been counted) when I dumped them in my LAP. Splat, crunch. Ate them anyway.

Career - no progress. I'm still motivated though. My job has worn me to the bone.

nancy - good job on the exercise. Keep it up, with or without the weights. I'm jealous of your dedication. I'm not a consistent exerciser.
Does it seem like we're just talking to each other? Hello, where's everybody at?

LOL yes at times it does seems like we are talking only to each other; and somethimes I think I am talking to myself. But tis the season of outdoor fun, sun and forget sitting in front of a computer.

My wish is that everyone is outside -moving-

Anyway today may be a challenge, suppose to have a romantic picnic with DH which is great but he wants to do the whole cheese, wine and cracker thing. Points, Points Points. I am racking my brain on how to substitue and most likely will not be exercising tonight to counter balance

I'm HERE!!!! Nancy and Arkansas, you are not alone. I wish I could say I was MIA because I was outside enjoying the surprisingly nice weather we are having but alas it is not to be. I've been stuck at the computer all day for the past few days at work and when I get home the last thing I wanna do is turn mine on. My boss was gone for a few days so I spent that time with almost nothing to do but then when he gets back I get all this stuff dumped at once. But I'm done and it's the weekend so I'm back... for now at least.

And I just remembered that Katier is on a 9-day vacation with the fam so I don't think she'll be back until tomorrow night.... maybe... so we probably won't hear from her until maybe Monday.

Thanks, you guys, for the salmon recipes. I've put salmon officially on my menu for next Saturday so I'll let you know how it goes after I try it. Keep your fingers crossed.

I'm a bit bummed because I gained again this week. Another 1.6 lbs. But I suppose that's my punishment for choosing to eat a pizza last night after a crappy day at work instead of the grilled chicken I had planned. It was just so much easier to order a pizza that was delivered to me than to get my fanny off the couch and grill the chicken and make the sides.

I've been trying to stay away from too many processed foods this time because I personally feel better if I don't eat them much, but I think I'm gonna have to keep a few frozen dinners just for nights like yesterday. Of course, I'm not sure that would have helped. I could have easily made a pb&j sandwich and with a baggie of veggies I had already cut up but I instead reached for the phone. Oh well... I'm human right? lol

Well, I'd best be off. I've got laundry calling me. Hope you all have a good weekend.

Chrissy good to see you back, sorry work was a bummer I forgot about Katier being gone with family.

Don't let that gain get you down! and be glad you ate that pizza I had mine friday night I just opted to not have the cheese on it and ya know I did not miss it

well we did not do the whole cheese/wine/bread today picnic so I did not have to calculate those points so instead I made cod deep fried in batter LOL just as bad but did have healthy veggies go with it. And now I am lookig forward to not one but two lemon martinis
