Dinner was just pieces of chicken from the chicken I boiled to make soup and then a little bread with butter. I'd made a green smoothie earlier in the day.

Breakfast will be a green smoothie: banana, pear, kale, coconut milk, ice.

My usual breakfast: apple oatmeal (oats, skim milk, chopped apple, pumpkin pie spice, 1 T sugar = 7 PP+), coffee.

Lunch was leftovers from dinner last night- nearly 2 cups of black bean soup with some spanish rice and diced steak mixed in- 8 points for the whole thing. I am STUFFED!

I have made this recipe a few times, and its one of our favorite dinners!

Quick Pad Thai

6 oz whole-wheat cappellini or angel-hair pasta (about 1/3 16 oz box)
1/2 lb chicken breast, cut into bite-size pieces (about 1 c precooked)
1 tbsp fish sauce (I don't use this, but it is in the original recipe)
3 eggs
1/3 C chopped cilantro
2 tsp olive oil
1 tbsp creamy peanut butter (I use natural peanut butter)
1 tbsp sugar
2 tbsp red chili flakes

1. Cook pasta according to package directions. Toss with 1 teaspoon olive oil.

2. Heat wok or large skillet over medium-high heat and add remaining olive oil. Add chicken pieces and saute until just browned and no longer pink (about 4 minutes). Remove from pan and set aside.

3. In a small bowl, whisk fish sauce, peanut butter, sugar, chili flakes, and 1 tablespoon water until smooth. Set aside.

4. Crack eggs into pan and scramble until firm. Add in chicken and cook for another 2 minutes.

5. Add cooked pasta and peanut butter mixture to pan, tossing with chicken and eggs. Add chopped cilantro. Garnish with crushed peanuts, bean sprouts, or lime wedge if desired

It's super easy, and so good!! I calculated the recipe's nutrition facts that were listed and it came out to 9 points plus.

Went down a point last night. Why does 34 seem so much less than 35?

For breakfast today I had a wheat wrap with egg whites, peppers, onions, mushrooms and spinach (6 PP). It was so good!! If I could afford to get it everyday at work, I would.

That Taco salad sound delicious by the way, I will have to try that tomorrow! I might use ground turkey instead of beef.

I love taco salad. I use the 97% lean ground beef...points wise I think it's pretty even.



Any ideas for Chicken and Broccoli...I need to do it for like 6 points

This is what we had last night for dinner too. It's one of my favorite easy dinners that is relatively low in points. I mix the sour cream with the salsa to make the dressing and it's yummy!

Tonight we are having crock-pot chili made with lean ground turkey. If it turns out well I'll post the recipe and points (I have to do the recipe maker).
