On the topic of using things like a gallon of milk to calibrate your scale, that's not really the best way to do it. To properly calibrate a scale you have to have test weights that are in the same range as what you are trying to weigh. So if you weigh around 200 lbs, then you would need to use a couple of 100 lb barbell weights or the equivalent. As LinJbr said if the scale is off by a couple percent, you're not going to get much information from weighing a gallon of milk. Also scales might accurately weigh a 200 lb person, which is what they are designed to do, but not be as accurate for much lower weights like an 8 lb gallon of milk which is not in the range they are designed to weigh.
