Murph - cool data. I wonder if I could put mixed nuts into my food processor and make my own?

Hmmm. I foresee an experiment coming on.

I eat peanut butter and 1 tablespoon is suffice, but I am partial to Jiff and I eat it on 2 slices of 7 grain with and a sliced apple on top of the peanut butter and a glass of milk to wash it all down, nummers, infact it was my supper tonite! Fits perfectly on my maintenance plan and protein too, it does my body good!

I've tried soy butter, and I like the taste. But I generally like the taste of soy (although I can't stand the texture of tofu).

Yes, I'd like to see mixed nut butter! That sounds good.

I would suggest that you check the ingredients and find a peanut butter that is not sweetened with corn syrup.
(Sorry, I haven't read all the replies so I am not sure if somebody already mentioned it).

Okay, so this thread reminded me that I wanted to try and make walnut butter. I think it was Nelie who mentioned liking it. It worked and boy is it yummy. I put 1.5 cups of toasted walnuts (toasted them in the oven) in my food processor and add 5 teaspoons of olive oil to get it going, once it was "butter" I added 1 teaspoon honey and a pinch of salt. According to fitday that works out to 87 calories per Tablespoon.

I think I'll try a mixture of walnuts, almonds, and cashews next for a mixed nut butter.

Jiff, Skippy or the Reese's brand of peanut butter are awful triggers for me. For some reason if it's chunky I don't eat as much. Now I buy the organic brand w/out so much sugar and I do much better. One piece of whole grain bread, 1 Tbsp. peanut butter, and 1 Tbsp. shredded unsweetened coconut or 1 Tbsp. chocolate chips is my favorite snack to eat when I just feel like buying a pint of ice cream or a doughnut. I like to toast the bread, too. Yummy!

Zenon,
That's interesting. Did you use light-tasting olive oil? My taste buds are pretty finicky and very good at picking out the taste of olive oil even if used in small quantities. Could you taste the olive oil in the walnut butter at all?

Oh, nice to know that the food processor method works. I don't know that I'd add more oil to mine, though.

The Whole Foods by me has machines that fresh grind several different kinds of nuts. I'm wondering if I could buy a little of 2 or 3 different kinds and then just mix them together when I got home. Worth a try. And maybe later this fall I'll try grinding my own in the food processor. Wonder what pecan butter tastes like??

Tomato~ I used extra virgin (it's the only olive oil I buy) and it just tastes like walnuts, but if you wanted you could use a neutral oil too or even better walnut oil, but that's pricey.

Photochick~ Most of the recipes I've seen say you have to add extra oil to get it going, but I did find one that said the natural oils will release if you process long enough (at least 10 mins.) Otherwise it's not spreadable, just finely chopped nuts. If your processor can handle that, then go for it. I'm going to try it without oil when I do a mix. I picked up some brazil nuts to add to my mix too, since they have such a high amount of selenium.

I guess I'll find out, huh!

I already burned out my big food processor (a hand-me-down from my MIL) making pizza dough. If I burn out the mini-prep, my husband might kill me. I'll just have to take it slow and see how it goes. I'm thinking though, if I had to add oil, I might add a little bit of peanut oil? Or maybe even just add some water and then let it drain off after everything settles?

Dunno. But I love to experiment when I cook, so we'll see what I come up with.

I love peanut butter! I've take to eating healthy cereals for lunch at least a couple of days a week. Right now it's multi-grain Cheerios. Cereal by itself isn't so filling....so I throw in a couple of pieces of toast with peanut butter to carry me through a little longer. Couldn't LIVE without it.

I would recommend trying coconut oil. It is pricey but it smells sooo nice and it is also has less calories than other oils. There are many health benefits to consuming a little coconut oil as well. But I use it because it smells so yummy!

Heh. I've been using pure coconut oil on my body the last week or so. I think I smell like a pina colada, but my housemate says I smell like a Mounds bar.

*grin*

Either way, pretty yummy as long as it doesn't set off candy cravings!
