I just had the yummiest chili. I made it from a recipe i got off of the south beach thread. It's posted for all phases of the diet so I didn't even have to cheat to eat something that good. That was one of my biggest downfalls with WW, I couldn't really eat chili. Well i could but it was like 9 points for a bowl and it just wasn't worth it. I actually got out and roller bladed with my 4 yr old after Kim and I got back from our morning walk. OMG I almost busted my arse several times lol. I am definately out of practice. BUT i will get better.. i promise myself that much
1 pound lean ground beef (10% fat or less)
2 garlic cloves, finely chopped
2 tablespoons chili powder ( I used 3, i like it spicey)
1 teaspoon ground cumin
1 can (28 oz) crushed tomatoes (i used whole i'm a chunky girl lol)
1 can (15 oz) red kidney beans, rinsed and drained
1 sweet onion, chopped
1/4 cup canned diced chilies
2 tablespoons tomato paste
In a large nonstick skillet cook beef and garlic over medium heat, stirring with a wooden spoon to break up meat, until browned; drain. Add chilli powder and cumin; stir to combine.
Combine tomatos, beans, onion, chilies and tomato paste in slow cooker; stir in beef mixture. Cover and cook on high until the flavors are blended, 4-5 hours.
I added a cup of tomato juice because it was a bit thick.
Per serving: 142 calories, 5 g fat, 4 grams fiber (this is of course without the tomato juice)

Im trying to find companies to send my husbands resume to. We want to stay in the Middle East but his company that he works for is not as good as some others over here. So, I will be posting tonight alot while Im doing this. I hate how hungry I get at night. TV and night time= hunger Oh and internet and night time=hunger. YUCK.

Okay, I've been thinking of recipes to share, but as I announced in the previous thread, I'm desperately not original in my cooking... So I'll just post a dish I like to make:
- Quinoa
- Add pressed tomatoes, basil and small mushrooms
- Voilą, it's ready
Geez louise--gone for less than 24 hours and it has been a posting frenzy! I don't know if I have time to read it all, let alone post! But that's a good thing! Speaking of rolleblading--I have actually never tried that, but I do like rollerskating. My kids rollerblade--but I never felt as secure trying because the last time I tried to iceskate I nearly killed my knees from falling too many times. And I feared trying rollerblading would do the same thing. But I have heard that it really is easy. Sounds like fun!
