Lightbulb

I have to go to a luncheon next Saturday and must take a covered dish. Does anyone have
a recipe suggestion of maybe a casserole dish that would be legal for my friend and me
to eat that the others might enjoy too? Thanks for your help.

Hi Debbie,

I thought maybe something made with brown rice or
perhaps WW noodles of some kind. I know that I can put together a regular salad, but I thought maybe some kind of SB casserole would be good too. There are some others who are diabetic that will be there and since I am starting a wieghtloss support group in the church in May this would be a good opportunity to ease them into what we can have that is good to eat from SB.
I am even thinking about working up a SB dessert.
I will be searching through the recipes to see what I can find, but I just thought someone might have something that they like and perhaps they use for such a time as this themselves.

Hi Pat,

I like to take casseroles made with WW pasta, chicken, green veggies such as broccoli, zucchini, asparagus, and held together with Five Brothers Alfredo sauce. It comes in a jar, and has 1 g. of sugars per serving. It is used extensively in my favorite sugarfree cookbook. This is even better with shrimp instead of chicken. It is not low calorie, but is legal according to this particular cookbook. I am not sure if you are allowing yourself ANY sugars. I have lost a slow but steady amount of weight by allowing myself anything with up to 1 g. of sugar per serving.

PAT, I make a wonderful CRUSTLESS QUICHE -would this work for you? It's easy AND delicious! Def. check the old recipe boards, I'm sure there is a casserole there.

I have lots of books, but unfortunately, I don't cook much. I'll try to look through some tonight-sorry, it's been very hectic this past week in my house.

Hi Deb,
I would love to have your recipe for quiche. Never ate quiche when hubby was living...he said I wouldn't like it. Ate it after he passed away and guess what I loved it.

Hi Pat!

I like an old standby that calls for ground beef (you could use ground turkey also). Brown that then mix together 2 cans of campbells soup a dollop or two of sour cream and some cooked whole wheat noodles. It's a great casserole. One of those never fails. As far as the soups go, check the labels. I used to put one cream of mushroom and one cream of celery. But haven't checked the labels since starting SB. I think cream of anything would be good. Also works with the lower in fat soups too. After you have it all mixed, put it in the oven on 350 until it's bubbling in the middle. If you like crunchy toppings, you can crunch up a couple of triscuits for the topping.
