Just from looking at your menu-hard to tell without amounts, but you may just not be eating enough. At your current weight, you'd have to eat a little over 2100 calories to stay there, taking that you were moderately active. To lose, I would suggest about 1600-1700 calories a day to start-it just doesn't look like that's what you are getting.
If your body was getting 2100 calories and then say now, you're getting 1000 calories-you've cut your caloric intake in half-your body thinks you are starving yourself and it slows your metabolism down. Your body now can get by on say 800 calories, banking those 200 calories as fat for the future.
Remember, SB is NOT a low-carb WOE, I don't see where you are getting the recommended 40% from carbs, and just how much protein are you eating? Fiber? Calcium? And I'd stay clear of the SB ice cream-at least at the beginning.
If this is the problem, it's very fixable
