I usually make eggplant into a ratatouille (zucchini, eggplant, mushroom, onion, garlic, capsicum, canned tomatoes). You could add a can of kidney beans and some chilli to make a vegetarian chilli. Otherwise cook slices of eggplant in a nonstick then layer up with canned tomatoes and top with reduced fat cheese to make an eggplant parmiagana.
Deserts - I stuck to weight watcher jelly(jello) and plain yogurt in phase one.
