I am looking for recipe to use eggplant

I usually make eggplant into a ratatouille (zucchini, eggplant, mushroom, onion, garlic, capsicum, canned tomatoes). You could add a can of kidney beans and some chilli to make a vegetarian chilli. Otherwise cook slices of eggplant in a nonstick then layer up with canned tomatoes and top with reduced fat cheese to make an eggplant parmiagana.

Deserts - I stuck to weight watcher jelly(jello) and plain yogurt in phase one.

Welcome girls, recipes with eggplant are not my thing as I hate the stuff. Did you check out the recipie section? If not ask Ruth she is always full of great ideas.

Do a "search" for eggplant in the recipe section. Little Chick is right... there are some there...

Do you have the South Beach cookbook? There is an eggplant pizzetta recipe that I know is phase 1. It is pretty good - like little pizzas on top of an eggplant slice.

Tonight I am making a recipe from the cookbook that is eggplant and chicken and other stuff. I don't remember if it is phase 1 or 2 though.
