We've search high and low and can't find the answer.
The nutritional label says two slices is double the everything of candian bacon.
So I'm assuming if I have one slice then I should be ok? (The food guide said that cure pork was ok - but it's just so unspecific, there are a million cured porks and the nutritional is very different).

The Food Guide? The revised Phase I food Guide as posted in FAQ says PORK - ham - boiled. Is there another guide?
Prosciutto is certainly not boiled but per Fitday is nutritionally very close to Canadian bacon - ounce for ounce. Hmmmmm...which would you rather have - an ounce of Canadian bacon or an ounce of prosciutto?
