Default Cauliflower for Potatoes?

I haven't started the program yet, but was curious: Does the cauliflower "mashed potatoes" actually taste good??

Would love to hear your thoughts. Thanks!

Hi Elxr. Welcome to the beach

I love the cauliflower (CF) "mashed potatoes. I add I Can't Believe It's Not Butter and Mrs. Dash for some spice.

My favorite variation of this is to add some frozen spinach to the frozen CF, cook until very soft. Place in an a casserole dish and mash. Add the I Can't Believe... and spices. Then top with shredded mozzarella cheese and heat in the oven until the cheese is melted. This can also be done in the microwave.

I usually divide this up into individual microwavable containers and top with the cheese. So easy to take to work along with some leftovers from dinner the night before (such as chicken breast, salmon, sirloin burger patty, etc).

So, Sil, does it freeze OK after you put it in the individual containers? I know mashed potatoes (Can we say that here? ) don't freeze well.

Actuall Ruth, I have never frozen them. I usually make a batch that only makes 4 individual portions and keep it in the fridge. I use it over the next few days for lunch at work, etc.

I do the same with the Veggie Quiches~make a small batch and keep in the fridge for the next few days. Not sure how they freeze either.

I make double batches of veggie quiche and freeze 1/2 of them (the other 1/2 stays in the fridge). They freeze really well. When I reheat them in the microwave I ususally sprinkle a little extra low-fat mozerella... mmmmmmm!

I had trouble finding foil cupcake wrappers, though, so I used paper and it is SO hard to peel off. Does anyone know where I can find foil wrappers, or can I just make them in a non-stick cupcake pan?

Reynolds makes foil cupcake liners. Ask at the customer service desk at your grocery store if they can carry them for you. A lot of stores will do that, especially if they carry other products by the same vendor. If not, I’d go with a non stick muffin pan. I think it would be better than using paper liners. Good luck.

Except I don't think those foil cupcake thingies can be zapped in the micro. Am I wrong? (Been wrong before, been married twice! )

Hi there

i also make the veggie quiches and freeze them for the days when i don't have time to make breakfast
if they are frozen the foil wrapper comes right off and i pop the quiches in the microwave and voila breakfast in 2 minutes

as for the califlower mashed taters um well no, they don't taste like taters but they sure taste good and when you are having a steak it is nice to look at the plate as if you had the mashed taters ..

Thanks for all of your help! I will look for foil wrappers again, and maybe I'll ask this time. I figured they'd peel right off (before popping into the micro...) .

Hi elxr71! I do like the cauliflower mashed "potatoes", but I really like cauliflower. I was disappointed the first time I made it, because I guess I was expecting it to taste like potatoes, and it doesn't.....it tastes like cauliflower. I had to do a little experimenting to get the texture the way I like it....tried hand mashing, food processor, differing amounts of half and half.....but finally figured it out. Don't be surprised if you need to try making it a couple of times before you figure out what works best for you.

If you can't find foil baking cups for the veggie quiche, you can just use non stick muffin tins...just spray w/Pam or something similar first! You might have to "nudge" them out, but it works fine. What's your favorite veggie combo to put in the quiches?

thx, frannie. I ended up throwing in a bunch of whatever was in the fridge/freezer at the time. My favorite would be spinach, asparagus, red pepper and mushroom with shredded light cheddar. YUMMY!!! What does everyone else use?
