Because we have what I call "turn around time." Meaning, my morning starts at 4p, I eat "breakfast" at 5 or 6 pm with my family, I have "lunch" at 2am (or as close to that as I can), and then I usually drop "dinner" because I don't want to eat at 8am when I am heading to bed at 8:30am. When I am working straight, I have no problem, but when I have "turn around time" I have to figure out when to eat to be on schedule with my family so we can enjoy time together, on the regular day shift schedule (i.e. the normal family life schedule). Turning around usually causes me to miss a meal or two OR I over eat and have a meal or two extra. And when I get tired, I binge eat. The turn around time causes me the most problems, along with missing my last meal of the day (which should be at 8 am or so).
Also, for those of us working in the medical field, the times I have set to eat lunch likely don't happen. You know never know what is going to come rolling through the door just as you are about to sit down, or who is going to go bad as you put that first bite into your mouth. It's no wonder medical personnel are in bad physical shape!
