Ok ya'll. I found my new favorite breakfast. it sustains me for hours, is super healthy and full of whole foods! it is very phase 2, so avoid if you can't do the combination of fruit/grains in the morning.

I make my oats overnight in my mini-crockpot.
1/3 c. rolled oats
1 cup unsweetened almond milk
dash of cinnamon
1/2 mashed banana
1 scooper (i don't know how much it is, i just use the scoop that came with my seeds. my guess is about 1 T.) of chia seeds

either cook as you would normal oatmeal, or put all in the mini crock and cook on low overnight.

in the morning, put the other half of the banana and a handful of frozen berries into the blender with just enough water to get it moving. blend until smooth and then layer with the hot oatmeal.

I usually get two servings out of this, as the chia seeds really amplify the volume of the oatmeal.

ETA: does this make sense? i was rather tired this morning when I wrote it. It basically turns into a layered parfait after it is all over. I love the combination of the warm oatmeal and the cold smoothie. My kids raved about how pretty it was.

P2
1: oat parfait
2: lunch tbd - maybe tomato soup with poached eggs per UNT's link
3: running around town looking for new bedroom furniture - kind bar
4: pork chops with cranberry pan sauce, butternut squash puree, green beans (roll-over from last night)

exercise: running a 10k this morning...ETA: brought DS2 with me in the jogging stroller. Since I've been running, I've taken him in the stroller probably 3 times. It destroyed my time and my shoulders were aching when I was finished, but it was fun. He had a good time and it isn't like I'm looking to best my age group or anything. At this point, it's all about finishing final time was 62:02

That sounds pretty good, Zeff. I've never tried chia seeds in my oatmeal, but I'm going to give your recipe a try. It sounds like it would make a special Sunday breakfast.

B-lara bar w/spinach feta egg wrap
L-banana, berry, and almond butter smoothie
D-at my SiL's food truck, so I'll do the best I can. It will be organic at least

Exercised for the first time in over a week today. Stupid cold, but felt great to get back into yoga.

Zef-that oatmeal sounds tasty. I think it's so funny how in sync we posters are food wise. I was just complaining to my step daughter about the fact that I forgot to buy oatmeal. I'll try that next week!
