Susan, I noticed you said hotdish and had to laugh. I'm originally from Minnesota as well, though currently living in Louisiana. I think Minnesotans are the only ones that say hotdish instead of casserole.
My grandma almost had a heart attack when my mom (Irish Catholic girl) married my dad (Lutheran guy) and CONVERTED! Yahhhh surrrrre, you-betcha!
I'm actually the Irish (75) and German (25) Lutheran girl and I'm with an Italian (100!!!) Catholic guy. However, he's non-churching , and I'm very spiritual but more of a Jesus Hippie ("the greatest of these is love ") and not too stuck on tradition (stand up, sit down, open, shut, repeat.)
Do love a hotdish though. And I like Smilies
Yeah we were all kinds of ready for soup and chili, had cool weather for a week, and then back up to the mid 80's again, for fun. I believe it will cool off again this week though , so we can get back to the yummy fall chow!
PS Went to Lutheran school from Pre-K all the way through high school. In 6th grade or so, we learned a song that went a little something like this:

My husband has just enough Irish in him to give us an Irish last name.
I like your views on spirituality. That's more of how I think, but I did officially join the church after we had our 1st kiddo. I thought it was important for us all to be the same. They don't call it converting anymore, even though that's what I called it! And I never told my Grandma that I'm Catholic now.
Iowa and Minnesota are kind of like sisters, though.

My new fave lunch, I would say dinner but that implies I cook it for dinner too and Dh won't eat it but... Vegan SUSHI! I have been making mine with arugula, avocado, carrots and cucumber. SO delish! add a lil wasabi to the side and some bragg's with ginger... MMMMmmmmm

I made a quinoa casserole last night. It was excellent.
1 1/4 c. quinoa
2 cups vegetable broth
veggies of choice (I used zucchini, red bell pepper, sweet onion, 1/2 sweet potato)
seasonings of choice (i used a bit of creole seasoning, some garlic and herb mrs. dash and a few fennel seeds)
bake at 400 for 50 minutes. it's SO good. I served it over fresh spinach. Everyone, including my 1 year old, loved it.
I can imagine making it more harvesty with different types of veggies. I imagine some cubed squash and other root veggies would be pretty tasty.
EmmaD - I made those sweet potato gnocchi you posted a link for. They are good! My only suggestion is to make sure you add a good amount of cinnamon, because I found them a tiny bit bland.

Good to hear! I haven't even gotten around to making them, I have been distracted by too many other recipes. I guess there are worse problems to have, haha. I am looking forward to trying these.
