Default Diet Soda Cakes/Cupcakes

OMFreaking God. I have always needed this in my life.

So I'm PMSing and craving chocolate like crazy. I love this fudge cake from a nearby restaurant that is like 900 calories per slice. Looking for alternative on MFP, I read about the diet soda cake. Basically you just get a cake mix and instead of adding the eggs, oil and whatever else the cake calls for, you just add a can of diet soda.

I made 24 cupcakes with the following ingredients:
-1 box of super moist dark chocolate cake mix
-12 oz of club soda ( i think you can use any diet soda if you'd like, this is what i had in hand)

These cupcakes are delicious! They look and are super moist, but a little crumbly, which I don't mind. They are 170 calories for 2 cupcakes (85 each) which beats 900. I'm sure it could be made lower calories by using a lower cal cake mix, but i needed the chocolate LOL

You can also make a low calorie frosting using low fat cream cheese, vanilla extract and splenda or whatever.

That is awesome! It's great to have a lower cal alternative for those tough PMS times. Glad you enjoyed those! Someone here told me about using a can of pumpkin (not spiced) with a cake box mix. I haven't tried it yet, but I'm sure I will when I get PMSed next time!

I have made it several times, no one will know that it is anything other than a regular cake. One of my favorites is German Chocolate with Dr Pepper Diet cola. Yummy ! I have only made the cake, haven't tried the cupcakes.

i left the cupcakes in the kitchen last, 12 left, and when i woke up there were only 6 left. my brother came home drunk and ate the rest LOL i asked him this morning what he thought of them and he said they were great and i should make them again! feels good that i'm not making these fat and cholesterol loaded treats and giving them to my family. it feels good that they think it's a treat, yet its super low cal.

I've made this a few times. I like how basic it is - just cake mix and a can of soda. I'm a terrible baker, so if I can make this come out good, anyone can.

Didn't think of using club soda, I will try it (less chemicals from the diet soda). It does come out really good though.

I made this... SO delicious! I used sugar free devils food cake mix and diet coke. I topped it with a tablespoon of fat free cool whip. yum yum yum!

I think I love you. This sounds delicious. Right now I'm not having any sweets, but once I can start treating myself again, I'm going to try this ASAP! I love love love desserts and I need to start finding alternatives that are healthy(ish) but still delicious. This sounds perfect!

I bet strawberry cake with diet sprite would be fantastic. My teenager came home with a box cake mix and fresh strawberries 3 nights ago, and I still haven't made the cake for her because I am afraid to eat it!!! This will work out fabulously!!!! And if I do it while she is at work, she will never know how I made it dietetic.

Thanks again for sharing this idea, I just made some! I used an organic chocolate cake mix that has only 300 calories for the entire box, and club soda because I didn't want the chemicals from pop. I got 18 cupcakes in total so that's..... drum roll...... 16 calories each!! Crazy! They're good enough to satisfy my dessert craving, I just had one with strawberries.

oh yeah...... I have a smile on my face
