Default Clean Eaters

I eat primarily-clean (purchase several items for convenience/lack of ability), and vegetable broth is likely my number one purchase. I buy it organic and low sodium, but I'd like to try my hand in making it myself.
All of the recipes I've found call for massive amounts of produce. I'm not rich!

I do know I can keep a vegetable scrap bag in my freezer and put my produce peels and ends in.

Can anyone tell me how they make their own veggie broth?

Exactly like you just said. Any time I cook I save all the scraps and freeze them. After a week or two I have a fairly decent amount (since I eat clean too and am vegetarian so use a LOT of veggies.) Then on Sundays I just dump those frozen scraps in a big pot, fill with water and simmer for about 2 hours or so. I strain it, make soup with that broth and it all starts all over again. Right now the broth I made is a lovely color pink due to the red chard scraps that went into it.

That sounds awesome and incredibly simple. I'll have to try that and let you know how it comes out! I always get excited over the little things

It really is so simple, and you feel really good knowing that you're not wasting any good vitamins in the veggies, creating waste with the packaging from the broth, etc. I do love the little things too. Glad to be of help.

I also dump limp/ unsaveable/ too-lazy-to-stir-fry vegetables into my freezer bag. Limp carrots, celery, etc. all go in. Also, don't be afraid to put the weird scraps in! Skins from peeling vegetables, carrot tops (w/ greens), celery leaves, etc.
