  • Stuffed poblano and bell peppers with rice and black beans no cheese with fresh from the garden salsa and guac! YUM!
  • Last night's dinner was so good and easy that I made a variation of it again tonight. Grilled portobellos, zucchini, butternut squash and tomatoes, topped with shaved parmesan cheese. MMMMMMMMMM!
  • chicken salad (chicken, scallions, celery, green peppers, on romaine) with iced tea and a peach for dessert.
  • I have a giant zucchini I'm going to stuff with crumbles, veggies, beans & rice, the usual salad on the side
  • Grilled teriyaki flavored tofu with roasted cauliflower and red bell peppers.
  • Open faced turkey BLT with Ezekial bread with a large salad
  • I did it! I finally made bean burgers that weren't full of bread crumbs but held together. We had those with stir fried bok choy with soy sauce & sesame oil.
  • Yumm...it's always nice when the bean burgers stay together!

    We're having salmon patties, broccoli w/fresh lemon and a great (as always) salad.

    I had butternut squash "fries" with leftover roasted cauliflower and peppers.
  • Leftover pork loin with sauteed onion, mushrooms & garlic, with steamed broccoli & cauliflower and a little shaved Parmesan on top.
  • Oh, today's menus from everybody look so good!

    I had lemon basil salmon again (I try to eat salmon twice a week), baked, with zucchini.
  • Tonight's main dish is Sirloin Steak with Artichokes, Tomatoes, and Olives from the South Beach Diet Quick and Easy Cookbook.

    ETA-I decided this was a good day to make Janet (Jandaman's) Moong Dahl.
  • Tonight is ham, asparagus, pasta which has a "cream" sauce made from nonfat evaporated milk. Original recipe calls for zucchini but Brian prefers asparagas so I use that.
  • I sauteed fresh peppers from our garden with onions and Tofurkey Italian sausage. Jake had his on Italian rolls, but I just piled mine on a plate. Scrumptious!
