I made this last night and used it on my black bean/egg breakfast. It was really good and a nice break from the spinach omelets I've been eating most days. I'm sure this will be good on all sorts of things

Avocado Salsa

3 large ripe avocados (not soft) -- coarsely chopped
3 fresh tomatillos (husks removed) -- wash, dry & dice
1 small onion -- finely diced
2 cloves garlic -- minced
juice of 2 limes
1 jalapeņo chili pepper -- minced
1 teaspoon salt
1 bunch cilantro -- minced
In a medium bowl, stir together avocados, tomatillos, onion, garlic, lime
juice, chili, salt, and cilantro. Let rest for at least 30 minutes before
serving.
Makes 4 cups.

NOTES : This can serve as a spicy marinade for poultry or fish. Stir the salsa into a soup to spice up a light lunch with the avocado variation. It can be used in the same way as guacamole. Since avocados are perishable, prepare the variation no more than one day ahead.
