Yeah, it's definately something you have to do until the day you die. Even when I get down to a healthy weight and can add more calories since I wouldn't be "dieting", I'll still have to watch the carbs to maintain my weight or else the IR will spiral back out of control. While the pounds may eventually come off, the IR is with me for life. Luckily I always had a healthy diet with lots of lean meat and veggies, it just wasn't the right diet for my insulin resistance. I'm glad that this low-carb diet isn't very hard for me to do, the only change from my old eating habits was to cut the carb servings to two a day, and a bit less dairy. So this isn't driving me crazy at least, and I can see myself doing this for as long as I have to.
I got hit with pneumonia for the past month and went off my diet and ate more like I did before the low-carbing. I didn't gain any weight, but I also didn't loose any. So now I'm back on track now that my health has returned, and another few pounds have trickled off!
