Asparagus Salsa
Asparagus Salsa
--------------------------------------------------------------------------------
Thought I would share this recipe from Taste of Home magazine. I picked asparagus today and made this, it is great. I like the lime juice better than the vinegar, but this is just a matter of personal taste. I used it as a salad instead of with chips.
Asparagus Salsa
1 pound fresh asparagus, trimmed and cut into 1/2"pieces
1 cup chopped, seeded tomatoes
1 cup finely chopped onion
1 small jalapeno pepper, seeded and finely chopped
1 tablespoon minced fresh cilantro
1 garlic clove, minced or pressed
1 teaspoon cider vinegar or lime juice
1/4 teaspoon salt
Place asparagus in a large saucepan, add 1/2'' of water Bring to a boil. Reduce heat;cover and simmer for 2 minutes. Drain and rinse in cold water.
In a bowl, combine the aspaaragus, tomatoes, onion, jalapeno, cilantro, garlic, vinegar and salt. Cover and refrigerate for at least 4 hours, stirring several times.
YIELD: 3 cups
