What snack gets you through tough times? I have 2 for my sweet tooth. The first one is warm cream cheese, peanut butter and Splenda. Mmmmm. That recipe is in the dessert recipe files.
The second one, easier, is a blob of natural peanut butter on an individual snack size Hershey's sugar free chocolate bar. They are the bite size pieces. Makes a great snack, and it is easier to control the portion size!
A big spoon of crunchy Jiff PB that I just eat slow and savour to make it last a long time. That will usually get me thru the I'm-bored-I-want-something-to-eat or I'm-upset-and-could-eat-the-entire-contents-of-the-refrig times.
They just opened up a low carb supermarket in my neighborhood. It is a store that has everything low carb, Keto Products all Atkins products. I bought sugar free cheesecakes, macaroni and cheese and PIZZA. But I am afraid to begin eating these things...although I just had one of the cheesecakes. I am doing a combo of South Beach and Low Carbing, and it seems to be working for me.
if i'm really hungry for something sweet, i have either a T of peanut butter or a T of cream cheese mixed with 1 packet of splenda. either seems to tide me over well.
For salty snacks, I have macadamia nuts every morning for my morning snack. In the evening I sometimes (rarely) have B-B-Q pork rinds. For sweet snacks my favorite is carbolite pecan caramel candy bars (< 1 carb) frozen. I feel like keeping them in my freezer makes me more accountable because I can't just open the box and scarf one down in 2 seconds. I have to make a conscious decision to go to the freezer to take one out. Then it takes longer to eat a frozen one than a thawed one.
Cheddar cheese and Rotel (diced tomatoes with diced chilies). Nuke, and dip pork rinds in it. Granted, I'm used to using good tortilla chips in it, but the pork rinds work just fine.
Russel Stofer's now has a line of sugar-free chocolate candies, and they are the same size/price as the Hershey sugar-free miniatures. I got some of their peppermint patties, and even my sister says they taste better than York's! They have chocolate-caramel cups, tuffels, pecan delights, and a few others. Great stuff!
MMM Russell Stover's - I love the peppermint patties - I eat them slowly and limit them to two/day at the most - otherwise they don't set well with my stomach.
Other suggested snacks: Pepperoni, string cheese, our vending machine at work occasionally has meat & cheese stick packs, SF pudding or Jell-O.
In the winter - my comfort food is hot chocolate I make myself and have in the evening before bed:
1/2 c. hot water
1/2 c. half & half
1 pkg. Splenda
1 t. unsweetened cocoa
dash of salt
1/4 t. vanilla
Stir water with dry ingredients until smooth. Slowly pour in half and half and vanilla. Nuke about 2 minutes. Top with some cool whip.
Another choice is a rootbeer float - sf vanilla ice cream and Mug Root Beer (it is caffaine free)
Soften some cream cheese with a bit of whipping cream and add a bit of s.f. jello powder. Stir well and eat slowly with a tiny teaspoon.
Take natural chunky peanut butter and swirl in a tsp of real butter and a few grains of strawberry s.f. jello or Crystal Lite mix. Nibble on it slowly.
Whip up some cream and swirl in some softened PB. You can make a low carb chocolate sauce for this using unsweetened Baker's chocolate, cream, bit of butter and Splenda. Nuke and stir. Keep in small container in fridge. Even better with some chopped toasted pecans. Almost like a sundae. Just don't overdo.
