Default Christmas Candy

Hi Everyone!

I started Atkins the day after Easter and I am doing really well. Lost 12 #'s so far and have been able to drop two of my Blood Sugar pills. No cravings, etc...

My problem, however, came from work. One of the guys at work asked me when I was going to bring in my candied walnuts again. I told him at Christmas, but in the meantime I need help!

Does anyone know if Splenda can be used in place of the sugar for making candy? This has to be able to boil up to Soft Ball stage to coat the walnuts properly. Has anyone tried this?

First of all welcome to the LC Forum! It's a great group of folks here with lots of support and advice. We also work in the odd giggle or snicker - and I don't mean the candy bar.

Splenda can't be used as a replacement for sugar in most candy making. It does not crystalize at all. I guess the sugared walnuts are no-go for you. (It is possible to make this stuff and not sample, you know. ) You might also check the Splenda recipes on the box or their website for other recipes.
