Would anybody be interested in logging daily food menus? I'd love to keep up with some fresh ideas! I haven't posted in a while...life is crazy trying to keep up with the site, work, family, etc. I have some serious catching up to do! I went back on low carb about 3 1/2 weeks ago. I am doing really well at it, and lost 8.5 pounds last month. I need to stay active on the board, and daily menus would be a good start for me. I'll start, please jump in and join me!
Friday:
B Strawberry smoothie
L roast beef, mustard and colby rollups, with cukes in vinegar
D Bacon and eggs and tomato slices
Coffee and cream
Thursday:
B Strawberry smoothie
L egg salad on romaine hearts
D grilled chicken smeared with sour cream and black olives, green beans, a few bites of carrots, salad and cukes and vinegar
S 2 big handfuls of popcorn at the movies (planned cheat!)

I use miracle whip (if I cant use whip, then I dont want it) usually about a tablespoon to one serving from the bag, and a good shake of bacon bits. Hormel Brand. I find I dont need alot of whip, because it sits for a couple hours before I eat it, and the broccoli lets out some of its own moisture. Thats it....nothing fancy but its really good.
Saturday
Breakfast, 2 eggs w/cheddar cheese
Lunch, 3/4 cup cottage cheese w/berries and splenda
Supper, 1.5lb porterhouse bbq'd with tons of mushrooms
Well today I hit my loss of 10 pounds, so tonight I had my victory dinner. I had planned on eating dessert too, but I didn't want it by the time I finished. I will wait and eat my dessert on Mothers Day.

L peel and eat shrimp and chilli sauce
D 2 small tamales, 1 chile rellenos, 1/2 taco, some beans and rice, chips and salsa!!!
No time for snacks, worked outside in the yard all afternoon, and 6 hours after dinner, I'm still full!
Victory dinner wasn't as fun as I thought it would be...I felt guilty!
Can I join in? I have been following faithfully and I am not loseing this time....I think I know why...I had to have two epidural steroid injections..I gained weight with the first one....so I started my low carb before I had the second one....I wanted to make sure i didn't gain again!!! I have a hard time doing Adkins induction diet because I get very, very constipated...(sorry)I just start like eating meat eggs and lost of veggies...that is usually enough to keep me really going and loseing weight....it just seems that since I had these steroid injections (in my spine) I definatly gained and now can't lose...I have been very vigialant on my diet. I have not knowingly ate anything bad....today I had scrambles eggs and sausage for breakfast,,,
beef weenies with colbyjack cheese in them for lunch and
hamburger patties with salad for dinner....I have been eating simalar to that everyday. Not gaining (yet) but Not loseing...any suggestions? thanks so much!!!
Yep, those steroids might be causing trouble. What kind of salad dressing are you eating? Check the label to make sure there aren't any sugars in it. If you are trying to do induction, then the strawberries are out. Otherwise, you can get by with a few each day. Cool whip is a no-no. Lots of sugar. You can whip your own cream by using heavy whipping cream in the dairy section, beat it good and add a couple of packs of Splenda. Better than cool whip!
Just be sure and read all the labels. If you aren't getting any sugars or starches, it is probably the epidurals. If you aren't sure if you are eating right, feel free to post here every day!
Oh yeah, to aid that constipation, try and get some psyillium husk in. It is very high in fiber and will keep you 'going'! I put some in my smoothie each morning. You can probably sneak it in cottage cheese.

D shrimp and scallops with mushroom alfredo sauce over zucchini ribbons.
The problem with dinner was that it was probably more like 4 servings instead of two. I made it all of the top of my head (well I used canned alfredo sauce) and I thought it was right for two. I should have made a salad and had leftovers. However, I don't want leftovers of this stuff - the whole house STINKS! We've had the windows up and ceiling fans going for 3 hours and it still smells. I went to Walgreens a while ago and bought some Odor Neutralizer, that helps a bit...must be all the wood in my house, combined with no attic ventilation. I haven't cooked fish in ages, now I will have to blacklist scallops.
Miss D, here is what is in my smoothie. The kefir and/or yogurt has carbs, but the plain is ok because the carbs eat themselves in yogurt...
1/2 cup cottage cheese
1/4ish cup of plain whole milk yogurt, or plain kefir
1 serving vanilla whey powder
2 tsp psyllium husk
7-8 drops liquid stevia
Splash of Atkin's Stawberry syrup
3-4 frozen strawberries.
Whirl and drink.
Oh yeah - It is REALLY thick. You can thin it down with a little cream or water if you want.
Jennifer, put a pot of water, with a many drops of real vanilla on the stove to boil. 1/2 hour to an hour......then walk the pot around the house to each room, stay in each room that stinks for a few seconds. This works every time to get the fish smell out of my house.
Can I join in? I really need some help with recipes, I seem at a loss of what to eat. I have recently begun low-carbing Atkins...it has been a struggle!

They just tasted soooo good.
I have been craving some veggies, and I have read the Atkins book, but I was wondering, is it ok to eat green beans. I looked on the package and it said that it was 5g of carbs per 3/4 c. So I figured that would be ok...what do you all think? And the tomatoes????
