Default new to "low-carb" and discouraged...

Hi, thank you to everyone who takes the time to read this. My name is Adrienne and I'm 31. My husband is 49, we have young twins and I've needed to change my eating habits for a long time now. I was a carb-o-holic. Hubby decided to do Atkins because his triglycerides were so high. He's only about 15-20 lbs overweight and he works out daily and we're hoping this will help his triglycerides.

Anyway, I went on Atkins with him because, well, frankly, I'm WAY more than 15-20 lbs overweight (like a good 50-60 lbs!) Anyway, I've had a very difficult time with low-carb/Atkins because, quite frankly, I'm starving myself on this diet. I can't stand most veggies that I'm supposed to be eating (broccoli, zucchini...) The thought of eating another egg or slice of greasy bacon is making me nauseous and I'm on the road a lot and I can't eat another hamburger minus the bun one more time. I've been subsisting off of the Atkins bars (which is putting me in the poor house) and grilled chicken. I love red and yellow peppers so every three or four days I'm making a stir fry of chicken and peppers with garlic and onions.

I KNOW that carbs are the culprit to my weight problems. And, honestly, my desire for sugar and potatoes have decreased substantially... but I can't eat like this forever. I'm in a lousy mood because eating is not a joyable experience at all.

Does anyone understand what I'm saying? Should I be looking more toward SugarBusters? Does anyone have any encouraging words for me? Thanks for your time!

Hi Adrienne! Don't give up. This diet may or may not work for you, depending on how many vegetables you don't like, but I think there are a lot of options left to try first. Before I go any further, you may be on the brink of getting used to this. I went through the same 'gag at the site of meat and eggs' scenario as you, and I've heard so many others do the same. Soon after than, something clicked for me and it became routine.

First, maybe you can try vegetables you don't really like, but in new ways. my sister hates cauliflower, but she actually liked them when I pureed them with butter, sour cream and bacon, and baked it with cheddar cheese on top. I guess the easiest thing to do here is tell me what vegetables you do like, or what you think you might be able to tolerate if cooked differently. Then we can give you some ideas. Also, you can find those veggies and look for some low carb ideas yourself. Look here, on the recipe threads, also there is a low carb cookbook (still a work in progress) on the main 3FC page you can look at. Also, pick a veggie and type in that name and 'low carb' into Google, and you may come up with some good ideas. Here is the 3FC cookbook:

Do you like salads? You really need to eat loads of it. You definitely need fiber!

Other meat ideas - chicken salad and tuna salad. I mix it up and put it on caesar salads for lunch. Have you been making fish? Wonderful for good fats - peel and eat shrimp, crab legs, shrimp scampi... You can make chicken a million ways. Try different toppings, like sour cream and black olives, or guacamole, or bacon, mushrooms and monterey jack, or whip up some low carb bbq sauce and smear it on. Roasted chicken from the grocery store. One of my things I like is deli roast beef, smeared with a horseradish mustard, topped with colby cheese and rolled up.
Another goodie for me is fajitas, no tortillas.

Eggs- go beyond traditional eggs. Try egg salad. I like it in romaine hearts. (any sturdy lettuce leaf will do) Gives me some crunch, and it is more filling than you'd think. Try making it with 3 egg whites and two yolks, it really stretches it. Also, crustless quiche. You can make pizza quiche. The basic quiche recipe should be in the recipe archives here, and put some pizza sauce on top, your favorite topping and cheese. Yum!

Have you tried smoothies? They have saved my diet. I don't know where I would be without my protein powder and cottage cheese. They really make good smoothies, and I add fiber to them to get in my daily requirement. We have lots of recipes for those too! For snacks, try nuts. They can help ward off hunger pains.

Try and not eat tooooo many bars. They might stall your weight loss. Some people can eat them just fine, but others have a problem with weight loss when they do.

You really might be getting ready to cross that threshold, so hang in a while longer! The key here is look for variety. There are so many plain weird recipes that I came across that I thought I wouldn't like, but I did! You will eventually find some more variety that you didn't think of before.

Now, with that said, SugarBusters is an excellent program and we have a great SugarBuster forum here. I couldn't do it because I am so carb sensitive. I couldn't lose on it. However, I plan on using it for maintenance when I am done losing weight.

The easiest thing for you is to do it with your husband, in my opinion, so if you want to try and stick with this, we'll be here for you! Participate all you need/want. I do better when I am being active on the boards.

Thank you very much, Jennifer, I really appreciate your response. I agree that Sugarbusters is something I think I will adhere to once I've achieved my weight loss goals.

I try to keep it to two Atkins bars a day. Do you think that might be excessive, too?

I looked at the pizza crust recipe and I will definitely be trying it this week. The balsamic chicken sounds good as well.

I like salads - meaning I like raw lettuce (romaine, spring mix, spinach) and I'll eat broccoli in small quantities but ONLY if it is raw. Like I said, I love red and yellow peppers. I think they're pretty good for me (thank GOD) so I'm eating them almost every day. I don't generally like zucchini but I have a recipe for 'zucchini cakes' that goes like this: grate two small zucchinis, squeeze water out (preferably with cheesecloth) add two cloves minced garlic, two eggs, chopped parsely, and 1/2 cup flour (I substituted the Atkins "baking mix" for the flour.) You basically fry little pancake-sized dollups and serve with Hot Sauce. The recipe calls for grated lemon zest and to be served with lemon wedges but I'm not sure how lemons are with carbs. But you get the idea.

I just finished the two week induction and initially, I wasn't following it very closely. I was eating a bit of whole-grain pasta two or three times in those two weeks. But still, I always seemed hungry.

Well, I'm going to go find out more about what supplements might help me right now and I'll keep my eyes out for more recipes.

Nice to meet you Adrienne.
I'm not much of a lettuce eater, but I do enjoy a salad that I make with a variety of chopped bell peppers, green onions, chopped cauliflower (substitute raw brocolli if you prefer it), and any other raw veggie such as tomato or cukes, that you enjoy. Try jicama or water chestnuts for a different taste sensation and lots of crunch. I make a dressing of mixed olive oil, balsamic vinegar, salt, pepper and grainy dijon mustard. Just a dash of artificial sweetener and it's ready to enjoy. Keep this in a covered bowl in the fridge and it's good for several days of salad. I find I'll eat salad more often if it's ready and waiting for me but won't bother if I have to wash the veggies and cut them up for each meal.

Adrienne, about the 2 bars a day...if you are losing weight, no it isn't excessive. If you aren't losing, then it may be too much! Just keep trying new stuff. I'm eating things I never thought I would! I surprise myself sometimes!

Lemon juice should be ok too...carby on a large scale, but it is so tart, you probably don't use much!

adrienne... not ignoring you. just too sleepy to post anything constructive. but major message: vary your protein. i carry an insulated lunch bag with protein snacks. deviled eggs. cheese. cottage cheese. deli meat and cheese roll ups.
