OMG! I made a great...
soup from leftovers last night. Just goes to show you that you don't have to waste anything! The quantities are not exact but here goes:
I had made a ham over thanksgiving. I took the bone (which still had meat on it) and covered it with water in a pan with a bunch of parsley. Boiled it partially covered for about two hours. Strained it and put the broth in the fridge (so the fat would rise to the top). Picked out the strained solids and put them aside.
Next day, removed the fat from the broth. Meanwhile, I steamed a bunch of cauliflower to make it soft, and mashed it. Put in the broth and leftovers from the bone and some more sliced ham, and about 1/3 lb. of blue cheese I had in the freezer. I then whipped this with a hand held blender and stirred in about 3/4 cup of cream.
OMG, it was sooooo good! All from leftovers! If the blue cheese is too strong a taste for you you can use cheddar or something else.
