Unhappy Breakfast Quiche ????

HELLLLLLP!!!!

As you all know, I am suffering greatly from both CRS AND CRAFT... that is the reason for this thread.......

A while ago, someone posted a recipe for a breakfast quiche. (I think it may have been made in muffin tins??) ... I have just spent 1/2 hour searching the recipe threads for it - maybe I missed it, maybe I'm just a dumb@$$ (most likely!! ), but...... I couldn't find it. I'm getting really tired of my cheese omelets, and the thought of "non-breakfast" foods (like a hamburger,steak or chicken) just kind of grosses me out before my 2nd cup of coffee!

I'd love to try a quiche..... someone please help me before I lose what is left of the rest of my mind!! Thanks chickies..... you're the best!

This is one that I have used, it is really not a breakfast quiche, but I changed it around a little and made it into one

Cheeseburger Quiche

1/2 lb lean ground beef
1/3 c chopped onion
2 beaten eggs
1/2 c mayo
1/4 c water
1/4 c heavy cream
6 oz grated cheddar (I always use more)
4 oz mushroom

Brown ground beef and onion, drain. Add mushrooms and cook through. Mix eggs, mayo, cream and water, cheese and salt and pepper to taste. Pour over ground beef in a pie pan. Bake at 350 for 40-45 munutes. Let stand 10 minutes.

I changed it around a little. I use pork sausage instead of ground beef, and instead of mushrooms I use green peppers. I have used cheddar or a Mexican blend of cheese. Using the sausage makes this a great breakfast quiche.

not sure if this is what you're looking for, but this is what i used to make, before i stopped eating!!!!

take a small baking dish, the single serving size. spray it with pam..

beat 2 eggs with whatever liquid [water, milk, cream], salt and pepper. stir in whatever else you want in it [veggies, meat, shredded cheese], then bake it at 350 until it's puffy and brown.

i have no idea what it's called, but it was reallly good..

and someone-i think it's scooby- makes cream cheesy eggs. a couple of hard boiled eggs [i think] mashed up with cream cheese and then nuked until warm..

I think it was Linda who made the breakfast Q. in the muffin tins. She is a great cook and I just LOVE hearing about whatever the latest thing is she is whipping up!

Default It might have been me...

I have been making a quiche-type thing called Breakfast Cupcakes this summer. I got the recipe from Atkinsfriends.com but it's basically:


Put crumbled cooked breakfast sausage, grated cheese or bacon or chopped ham or spinach or broccoli or whatever you have into muffin tins lined with paper. I like sausage and grated cheddar. Pour eggs beaten with cream or half and half over the top, about 1/2 full. Bake about 15 or 20 minutes, like a quiche, and they puff up some, then settle down. The idea is a precooked little eggie thing that freezes well, and you can nuke a few when you're in a rush. You can bake them in those big muffin tims- the 6 per pan ones. I do the regular cupcake size and eat 2 or 3 at a time.

I also read here somewhere, about using crushed pork rinds for the bottom crust of a low carb quiche. I haven't tried this yet, but it sound good.

Samsgrandma: I'm the lazy, non cooking one I make breakfast quiche in muffin tins and freeze them for the week. My secret recipies?

Go to frozen food section of your favorite food store.
Pick up carton of Pour-A-Quiche (comes in several flavors, my fav is bacon onion cheddar)
Defrost quiche according to package directions.
Pour into muffin tins and bake until knife come out clean. Not nearly as long as if you baked it in a pie pan.

Eat a couple now and freeze the rest, and feel smug as if you'd spend all day in the kitchn.

I wonder if the pre-prepared quiche (frozen one in grocers) has any sugar or starches.... or for that matter, preservatives. I already have enough preservatives in me now to last three lifetimes.
