I know that is a lot of carbs, but I am having trouble, and want to stay on the lower calorie side today and tomorrow. Plenty of water and homemade iced tea.

Eileen, if I don't plan I don't even have a ghost of a chance!
During the week, I get too busy and will eat any junk nearby, especially at work. And at home I will just graze through the day with no realy meals, or 3 small lunches and then a full dinner. I'll have some cashews, and then some cheese, and then some carrots, or a little peanut butter on a spoon... you get the picture!
Plus, then I can see what's off- usually that I am not eating enough veggies, or too much cheese. It's a habit from WW, that really saves me!

Did a lot of cooking yesterday, and am planning to make a big pan of chicken parmesan, enough for leftovers for lunches this week. Made a big bowl of salad too, that was good last night.
Went to bed so early last night, I didn't even look for desert!
B - 3 slices bacon
L - chicken breast, salad
D - chicken breast, salad, mushrooms
Leens - I never know what I'm eating either and post my menu a day in arrears. I usually have a general idea but never know for sure. I always keep chicken breasts and pork chops in the freezer that can be plopped in the oven or on George Foreman or the outside grill. And of course bagged lettuce and veggies.

You couldn't do this in Induction, but I am eating some carbs. I dredge the cutlets first in egg, then in a mixture that cuts the cread crumbs in about half. I just add some bran and some soy flour to Italian flavored bread crumbs. Adds fiber and protein, and I figure it cuts the carbs down, but gives me a little coating. Saute the chicken breasts, then lay in a baking dish, top with some tomato sauce and some grated or sliced mozzarella or provolone(the soft kind) then bake.
I do that to make cheesecake crust too, use 1/2 wheat flour with soy flour, bran, and walnuts or pecans put in the blender to chop them fine. Add some Splenda or whatever sweetener you're using, and melted butter, press into the pan. (like making traditional graham cracker crust.) I think these ideas are in the Fran Collough(Mc Clollough? I have no idea how to spell it ) cook book, or the other LC cook books.
