Basic Pan Shortcake
1 ½ cups reduced-fat complete pancake & baking mix, such as Bisquick Heart Smart®
¼ cup Splenda
1 tsp baking powder
1 cup fat-free half and half
Preparation:
Preheat oven to 425 degrees.
Coat an 8 by 8 inch baking dish with butter flavored cooking spray.
In a large bowl, combine baking mix, Splenda and baking powder. Add half and half. Mix gently just to combine.
Evenly spread batter into prepared baking dish.
Bake for 14 to 18 minutes or until golden brown. Place baking dish on a wire rack and let set for 5 minutes. Cut into 8 portions. Serve warm.
