Default Dining Dilemma

Hoping to get some suggestions!

We're off to a last minute Derby party today, so this will likely be my dinner. I've mostly avoided going to parties or at least avoided the snacks by eating before. I need to bring something so I'm looking for suggestions that will cover both my protein & veggies. I was thinking mini meatballs with roasted veggies might work but what can I use as the binder? Buffalo chicken dip (without the cream cheese) with celery? Ugh, I'm struggling...

Thanks Shasta! I ended up making "buffalo" turkey meatballs (I found a recipe that used shredded cauliflower and egg white as a binder) with peppers and celery. I had non alcoholic mojito's made with lime, fresh mint & a little stevia. It worked out well & my horse came in second so all and all a good night!

I make turkey meatballs using 1 egg, 1 cup of pre-boiled cabbage (goes a fair way to making up for not having bread in them), some red onion, mushroom, green pepper and lots of spices. Seems to work just fine no matter which kind of meat (although I add rosemary and mint for lamb instead of the garlic pepper and cayenne for the others).

Glad yours went down well and you had a good night on the giddyups, Gem.

Thanks Amanda! I always seem to struggle on social outings on this diet no so much in staying away from the wrong foods, just trying to make sure I get enough of the right foods that I need to eat (although the brownies looked pretty yummy!)
