And I cook with my oil, which I know isn't the best, usually to roast my veggies. Will have to fix that too.

Some people successfully add lettuce blended in their shakes. I have not and I know there are ways to do it so you don't even notice it. I am sure someone will probably chime in there.

Try roasting asparagus if you haven't already!

Just add your oil on your salads or veggies. You can still drizzle a but on roasted veggies, but you will get more of what you need by adding it on to foods.

I'm off of work today and tomorrow (cheers for a 3 day weekend!) so I'm going to be very busy in the kitchen. Things I want to bake/cook this weekend:

Roasted Cauliflower
Garlic Herb & Potato Rolls w/ potato puree
Cauliflower Tortilla
Hamburger bun w/ potato puree
Oatmeal Zucchini muffins
Shepherd's pie
Zucchini Chips
Homemade Mayonnaise
Crab cakes w/ potato puree

I'll probably be taking a ton of pictures and somehow don't think the board will mind at all. Wish me luck!

So far I've only made the oatmeal zucchini muffins but my house smells SO GOOD! I'm willing them to cool faster so I can eat them! I also made up a doc/PDF of all the recipes I'm trying so they're all in one place. Plus I'm doubling each recipe so it's interesting.

SV: My morning WI put me at 219.4 today ... goodbye forever to the 220s, and 2.4lbs to go before I've lost 60lbs!! I could conceivably make that for my official WI on Thursday, but if not (I'm changing my WI time to an hour later to save myself a little gas), I'll be there next week.

NSV: I needed to fix the speaker cables behind the TV--one had come unplugged--and I FIT back there without worrying I was going to knock the TV off and break it!
