for those of you who are in phase 4 or maintenance or doing your own paleo low carb homemade recipes....i wanted to share this recipe!!
i made it today, it was delicious!!

QUICK BREAD in 90 seconds!!!

INGREDIENTS:

1 egg, beaten

1 T. olive oil

3 T. water

1/3 c. CarbQuick bake mix

2 T. Jennifer Eloff’s Splendid Gluten-Free Bake Mix: http://low-carb-news.blogspot.com/20...-splendid.html

2 T. golden flax meal

¼ tsp. Splenda, granular (or equivalent)

3/4 tsp. baking powder

DIRECTIONS: Beat the egg in the dish you will bake this in. I used a 6″ ceramic quiche pan. Add the water and olive oil and stir again. Next add all dry ingredients and stir vigorously until smooth throughout. Microwave on HI for about 90 seconds or until center is dry and done. Remove and cool slightly. Note, it won’t be browned at all.

Carefully tip/lift out of dish using a knife tip or spatula. Toast either under a broiler (on both sides), or if it will fit, in your regular toaster. Butter and jam it up as is for a biscuit like flavor. Slice laterally after toasting for sandwiches. Slice before toasting if enjoying as morning toast. For scone applications with added fruit bits, cut into wedges and toast without slicing laterally.

12/3 cups almond flour, (400 mL)
(I use almond meal, i.e. ground sliced
almonds versus almond flour)
3/4 cup certified gluten-free oat flour (175 ml)
2 tbsp coconut flour, (30 mL)
(Bob’s Red Mill,® OR Aloha Nu®)
3/4 tsp xanthan gum (3 mL)


In large bowl, combine almond flour, oat flour (if you are intolerant to gluten-free oat flour then substitute another gluten-free flour), coconut flour and xanthan gum. In container with airtight lid, place bake mix and shake the container well to combine. When measuring oat flour (not necessary with the other ingredients) into measuring cup, make sure to tap the cup on the counter top and fill to the top to get the correct yield for the bake mix. Keep bake mix at room temperature for up to one month or freeze for much longer storage.

i made mine in 3 little ramekins but could probably do 4 as these were as big as a cupcake!!!

i sliced in half, and toasted like a crumpet...O.M.G.......so good!!! i added some homemade sugar free lemon marmalade!!

tomorrow i am making a sausage and egg "biscuit" with them!!

1/3 of the recipe...1 biscuit or halved to make 2 crumpets equals =
calories: 128
fat: 12 grams
carbs: 8.8
fiber: 6.6 g
NET CARBS: 2.2 grams
protein: 7.2 grams

tastes like bread!!! not "eggy" or rubbery at all!!
FLUFFY, MOIST, SOFT BREAD!!

i topped mine with some homemade lemon marmalade:
this is how i make it
wash 3 lemons...then i use a thin strip zester to remove long strips of lemon peel.
cut in half, and squeeze out juice and as much lemon pulp as you can but no pith! or membranes.
add to a small pot and cover with 1.5 cups of water and boil until lemon peel is soften about 10 mins.
remove from heat and add your sweetener of choice to taste
i used 6 tbsp SWERVE a sugar substitute but you could probably use splenda or stevia or xylitol
stir until well blended and no granules are present
in another tiny bowl, mix 1 packet gelatin with some hot water and dissolve
then add to your lemon mixture and stir well
taste for sweetness...i like mine a little tart....but you can add more if needed....just melt your sweetener in some hot water before you add.
pour into a small glass container and it will thicken as it cools
store in fridge.

42 pages and endless recipes later!!!,! Love it and thank you! I wasn't bored but love that I have all these options down the road.. I love how versatile the ip products are!! I have passed on some recipes (that I found on Steve from finlands site) to my coach and she's in love with me lol. I'm sure she's going to love these (especially the crab cakes everyone is raving about and I'm making next week :carrot: )

1/3 cup riced cauliflower (1 cup uncooked)
1 tsp garlic paste
1 tsp chili pepper paste
1 tbsp dried shallots
Dash red pepper flakes
4 oz diced ham
½ packet IP potato puree
1 tbsp parsley
3 TBSP Egg Whites

To make Riced Cauliflower:
Dice Cauliflower and place in microwave bowl… add 1/4 water and cook for 5 mins in microwave on high…and until just under cooked. Drain. Puree in Magic Bullet.

For Salsa:
Finely Dice seeded red and orange tomatoes and green tomatillos and add to small bowl along with 1 tbsp no sugar relish, 1 tbsp lime juice, 1 tsp olive oil, salt, pepper, fresh basil and a dash red pepper flakes!

so this is what i did with my leftovers from the deviled ham croquettes!

4 oz diced smoked ham
1/2 cup cooked riced cauliflower
1 leek
3 green onions
1/4 cup diced orange & yellow peppers

saute the leeks, green onions and colored peppers until tender.
add the leftover diced ham and cauliflower

meanwhile....heat 1/2 cup chicken broth, remove from heat and add your 2 oz daily milk allotment and 1/2 packet IP Potato Puree and stir well.

add to your veggie and ham mix and heat until thickened

1 tbsp parsley,
DASH RED PEPPER FLAKES (OPTIONAL)
salt and pepper to taste.

2 tbsp walden farms balsamic dressing
2 tbsp dijon mustard
2 tbsp walden farms maple syrup
...mix well and set aside

1 TBSP pimentos pressed of all excess liquid, squeezed
1 TBSP dried shallots/or onions
1 tsp garlic gold nuggets
1 tsp salt, dash red pepper flakes
3 TBSP water

add all ingredients into your magic bullet and blend for about 5-10 seconds until blended.

turn out onto parchment paper lined baking pan

i sprayed with non-stick pam spray and then folded over one side of the parchment paper and rolled the dough thin with a rolling pin, peel back parchment paper carefully and slowly.

score your "crackers" with a pizza cutter or knife

then i put the parchment paper with crackers on top of a wire backing rack so that heat would get underneath them

bake 350 for about 15 mins or until edges are starting to brown and crisp

then take them off the parchment paper and put them directly onto the wire rack...continue baking until desired crispness.

i cut mine in half...then cut one half into 5 bread sticks...(one was a sample!!)


recipe would make 10 garlic bread sticks!!

i put the bread sticks back into the 350 degree oven and baked 10 more minutes until nice and crispy!!! sprayed lightly with olive oil and then sprinkled with garlic salt!! YUM!!!

the other half, i sliced open to make the panini! i used a little homemade mayo pesto, you can also use walden farms flavored mayo, a large sliced of roasted red pepper, and some red onion slices....you can also add some fresh baby spinach leaves but i was out....sadly.

this is delicious!! DELICIOUS!!!!!!!!!!

very simple yet rich and creamy flavor...
IP Butterscotch pudding packet
1/4 Cup cold Water
2 TBSP Walden Farms Maple Syrup
Large Dollop of Walden Farms Marshmallow Cream
Mix all together and top with 3 crushed Ideal Protein Chocolate Soy Puffs!!

did you spray your dish with non stick spray?? mine didn't stick at all. i sprayed mine with non stick coconut oil.

I made a double-batch. It fit great in a 9x9! If I made a single batch, I'd probably use my pyrex loaf pan.

so i am not a huge fan of asparagus...which most "mockamole" recipes use....so i decided to get creative...and made this delicious creamy version!!

1 IP Potato Puree Packet
1 Egg
1/4 Cup Roasted Red Pepper liquid from jarred peppers
1 Large piece of Roasted Red Pepper Diced
1 tsp dried minced onions
1 tsp rosemary
2 tsp Garlic Paste from the tube


bake 350, 20 mins, remove from pan and cut into sticks and bake 10-15 mins more until crispy crunchy!!!!

i baked mine on the drying rack right on the oven rack...so they got toasty on both sides!!!

golden goddess soup....can be anything you like really...

basically, use lighter colored veggies...
like
summer squash
onions (i prefer vidalia onions...but green are on protocol)
yellow or red tomato
radish
red and orange bell peppers
white or orange colored cauliflower

simmer in water or chicken stock then puree in blender

you can add more tomatoes, and some basil for tomato bisque!
you can add orange spice!!

sometimes i put to on a plate to cool faster!!
because i use a magic bullet and can't add while blending
like a regular blender with a hole in the top
to let out the steam!

i took my basic golden goddess soup, added some ginger paste from the tube and some orange peel zest and 4 drops of liquid stevia...
OH MY WORD....THIS IS HEAVEN IN A BOWL!!!

i love this soup base!! you can just go in so many different directions!

sweet, savory, spicy...like my spicy taco soup!!!

Rainbow: those garlic breadsticks are SO.GOOD. I had them twice today.
I need to experiment with egg whites instead of whole egg
I got extra exercise today (PT appt and a walk) so I'm not worried but in the long run...

I had everything at the house except whole eggs. Let me know how you do with the egg whites. I would prefer to use those as well.

I tried your cauli-tots the other night and boy what flavor; however I could not get the suckers to crips up on the outside at all. They were so wet and mushy. Any tips on how to crisp them up? Thank you. I love all your recipes. :D

if they did not crisp up, you probably had too much liquid in the cauliflower. try squeezing out the excess liquid before you puree the cauliflower. or when you chill, and this also helps....drain overnight in cheesecloth or a sieve over a bowl so excess liquid can come out.
