Sorry, I'm behind on Rainbow's recipe book being in the very slow land of dialup. I am updating now.

To answer your question. The link will always take you to the most current version of the recipe book. If you were to look at it at this moment, it will not have the Creme Brulle, but in just a few more minutes it will be there (still more formatting and saving as a PDF).

I suggest that you save the page when you open it to your favorites. Using the link in the future will take you to the latest copy (as long as I don't get behind again)

Whole Foods carries it too. I normally order mine from netrition.com as it's cheaper. Haven't used it since I started alternatives to IP..it's just been staring at me every time I open the refrigerator. :)

Baked Delicata Squash with Chili Lime Butter

Baked Delicata Squash with Chili Lime Butter

http://farm8.staticflickr.com/7254/8...3c428d06_z.jpg

Cinnamony Brown Sugar ZESTY LIME GOODNESS!!!
sort of a cross between a sweet potato and butternut squash!!
ONLY BETTER!!!!

http://farm8.staticflickr.com/7121/8...9aa05598b1.jpg

this is delicata squash....it IS considered a winter squash,
however, it is a LOW CARB choice, so i use it as a veggie choice....ALTERNATIVE!!!

this is the nutritional values...so use your own judgement

inside it is similar to pumpkin...and you just scoop out all the seeds
and leave the lovely orange center to bake!!

use as many delicata squashes as you need servings. 1 squash equals 2 servings.

Preheat oven to 350 degrees. Clean all your squash by removing all the seeds.

http://farm8.staticflickr.com/7279/8...677920e1e6.jpg

Place the squash cut side down into a baking dish.

Pour water into the dish to about 1/4 inch deep.
Bake in preheated oven until the squash pierces easily with a fork, about 30-40 minutes.

this is what i used...

Meanwhile, melt your butter, and blend the butter with the lime juice and chili powder in a small bowl. add the cinnamon brown sugar syrup to taste

Spread the butter mixture into the cooked squash, and serve immediately.

You can serve it in the shells for an elegant look...or you can scoop it out and sort of whip it and make a light souffle like texture and mound it on your plate!!!

i usually serve it in the shell....

this also freezes well.

i don't think the WF peanut butter would work because you use the PB2 peanut butter powder DRY.

Hi 2sweet4u,

I worked with Rainbow to make sure the recipe book I've created was okay to share with anyone. That's why I have it out on Google Docs and keep it updated so anyone can enjoy Rainbow's creations.

Not sure you're aware there is an earlier book. You might also be interested in these recipes.

Made the Cheesecake Nibbles tonight, but with a couple of alterations.
I didn't have any Choc covered soy nuts, so froze a Choc Covered Peanut Bar from HealthSmart, then chopped it up to small pieces. Also added a small amount of PB2 to the cheesecake mixture - maybe 3/4 tsp??? Since I don't have a mini pan, I used a regular size cupcake pan, and made 6 'Nibbles'. Still baked at 325 for 12 minutes...AWESOME!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Peanut Butter Stir Fry!!!

Peanut Butter Stir Fry!!!

OMG....THIS IS SO DELICIOUS!!! i HATE....ok i should NOT use the word hate...i totally positively absolutely dislike the WF peanut butter!!! ewwww gross!!!! HOWEVER....this recipe surely makes me a believer!!!

CREAMY.....YUMMY.....PEANUT BUTTER SAUCE!!!!!!!!!!!!

• 1 teaspoons cornstarch OPTIONAL (adds 10 calories and 2 carbs, 0 sugar, 0 fat, 0 protein)
• 1/4 cup chicken broth
• 2 TBSP walden farms peanut butter (i also added 1 TBSP powdered PB2 as I just don't like the WF peanut butter taste)
• 1 tablespoons braggs amino acid or soy sauce
• dash ground ginger
• dash salt & pepper
• 1- 8 ounce boneless skinless chicken breast, cut into strips
• 3 teaspoons olive oil, divided
• 1/4 cup chopped vidalia onion
• 1/4 cup thinly sliced sweet orange peppers
• 1/4 cup thinly sliced sweet red peppers
• 1/4 cup thinly sliced mushrooms
• 1 teaspoon minced garlic

In a small bowl, combine the first six ingredients until smooth, will be a little lumpy....but will get smooth in the pan; set aside.
In a large skillet or wok, stir-fry chicken in 1and1/2 teaspoons oil for 3-4 minutes or until no longer pink. Remove with a slotted spoon and keep warm.
Stir-fry onion and peppers in remaining oil for 3 minutes until soft but not caramelized. Add mushrooms; stir-fry 3-4 minutes longer or until vegetables are crisp-tender. Add garlic; cook 1 minute longer.
Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add chicken; heat through.
